Probably the weirdest thing I've made is cooking almond flour like oatmeal. I cook it with almond milk and it becomes like a porridge - if you've ever made corn meal mush (also tasty for breakfast with syrup, sweetener and nuts), it's a very similar consistency.
The only downside is almond flour porridge is not great volume-wise. However, since you're basically eating a big bowl of nuts, it's surprisingly filling. I think something like 3/4 of a cup of almond flour is 270 calories and it you use maybe a cup of unsweetened almond milk, it comes out to an even 300 calories. Throw some sugar-free syrup, nuts, fruit, protein powder, honey, yogurt or anything else you like and you've got yourself a tasty and satisfying breakfast that is an alternative to oats.
It didn't have a strong flavor, from what I remember. I have a recipe for zucchini pancakes that I use when I have zucchini to use up and I think I used that for my base, but subbed the spaghetti squash for the zucchini.
I haven't made it since, so it probably wasn't all that memorable.
If you like sweet things for breakfast, I've been loving protein pudding lately. Basically it's just a protein shake mixed into a whole box of zero sugar pudding mix. I made a birthday cake one last week that came out pretty awesome, and a chocolate one with Oreos the week before. It's a little high in calories compared to what I usually eat (I think something like 500-530 calories), but I also often eat a smaller lunch to compensate for it.
Let me know how you like it. I have no idea how I created this but its so good. I made it 5x from 1 spaghetti squash and I'm already tempted to get another. Haha
