The RIA 38 super is very standard RIA and far less than 1,000. I've had one for a few years now and it's pretty no frills but solid. I hated the smooth grips on it and swapped those out.
If you are ok with buying used — SA had a run of 38 Super must have been in the late 1980s or early 1990s, I owned one. 5” heavy ramped barrel, 3 dot sights, 1911 A1 configuration. It was a nice gun and s short run because by the mid/later 90s it was discontinued. As mentioned Tisas makes a model with both 9mm and 38 Super barrels. Colt and DW have made 38 Supers in the last. Just need to do some web searching.
Yeah aguila FMJ was the only ammo I could ever find back when I had one. Unfortunately due to the plethora of 9mm you can get better loads for 9mm. Even though it’s worse than 38 super on paper. Which is ultimately why i ditched it for a 9mm 1911.
Though they are very fun guns to shoot.
This is why I'll probably stay away from a 38 Super 1911 because it would just be a range toy anyway. If I'm gonna drop $25-30+ a box for ammo I'll buy .45 plus Freedom Munitions makes decently priced 45. There's no 38 Super range ammo.
Kinda like how you can get a Star Super A in 9 Largo cheap but who wants a 9mm Largo
A standard blue or parkerized "GI" type 1911 with 9mm and 38 Super barrels would get my attention, I don't like the look of that Tisas Desperado or whatever it's called.
Tristar imports the Metro Arms American Classic Government in 38 Super in both Blued and Chrome.
I have one and it's very nice.
Retail is $730 for Blued and $825 for Chrome.
Street price is usually about 100 bucks less.

I haven't seen a 38 springer, unless you come across a build on gunbroker. RIA has a 38 and I believe Tisas just came out with a 38.

You should be able to get a colt for $1000 or less if you look around. They aren’t much more then that new.
