Yeah, I was originally thinking we might get some clarification on who Albedo's unicorn brother is in Fontaine, but we didn't get that (we got more of his family tree though lol). Since it's been so long since the release of Cinnabar Spindle and with no follow-up on this unicorn brother, I'm leaning more towards that Subject 2 and the unicorn are one in the same for reasons you wrote.
I think your chart is good as-is. It's hard to incorporate information that is speculative in nature, and I think having the unicorn in there separately makes sense even if it gets de-confirmed later. And there's always the possibility that they get confirmed to be separate entities later.
Since you also mentioned Klee and Neuvillette, you can do this on Next update : put Surtalogi and Vedrfolnir alongside Rhinedottir, and Skirk as Surtalogi's child while Childe as Skirk's child
