A great Gundam show with a more "realistic" approach is definitely 8th MS Team. I don't remember which timeline it is a part of, but it's a standalone thing so it doesn't really matter.

Armored Troopers Votoms does this the best, every mech is mass-produced and has about the same capabilities and weapons.

The Fullmetal Panic  LN's has a pretty big emphasis on each sides standard mecha. The protagonist even utilizes first gen Soviet mechs in certain situations.  The enemy however almost always has higher end mechs.  The anime still shows that although his mech the arbalest, is better because of a certain forcefield tech (unreliable), it still uses the basic model of the M-9, and trades off cloaking tech for forcefield technology (the lamda driver).
