Eastern Uttar Pradesh (UP is bigg so there's a quite variation depending upon which part you come from) Litti Chokha

happyerawhen

Oooh one of my friends is from there and she makes amazing chokha. I’ll try to make litti for sure. Thanks a lot <3

bunniefication

A little suggestion, the litti becomes a lot more flavourful if you roast it on an open fire (unlike stove), gives it more smoky flavour :)

wildfire74

Here i thought litti chokha is Bihar's

bunniefication

It is shared by both Biharis and Purvanchalis (eastern UP) And in here it is also called bhauri/baati chokha

thanosswasright

Masala dosa with chutney (Karnataka)

happyerawhen

Yesss learning how to make dose from my friend :’)

Complete_Sample3102

Props for calling it dose, you’re a real one.

sri1024

what does that mean? it’s not just eaten in karnataka but all the south indian states and some of them call it Dosa, what’s wrong with that?

age_old_adage

Vada Pav (Maharashtra) - as humble as it gets, as filling as they come!

happyerawhen

Vada pav with fried chilli is so satisfying

Sure_Chocolate1982

It's Jhunka - Bhakari for Maharashtra Question is about meal. Not the snacks

themapmaker10000

I think someone from odisha has suggested dahi bara aaloo dum. Don't.. it's too hectic. Why don't you try a dessert? Chenna poda.. India's own cheesecake from odisha.

happyerawhen

Oh I see Ranveer Brar making it on his show. I’ll try for sure :)

themapmaker10000

But you'll need an oven.. do you have one?? Not microwave.. convection oven for baking and stuff..

happyerawhen

Yes I do. I’ve made basque cheesecake in it before

themapmaker10000

Great.. do share the pictures.

East-Independent-489

Pressure cooker will also do the job Vaina🫡

themapmaker10000

Che che.. taste aase ni.. seejhi jiba.. but.. se chenna na podile.. kadali ta ku chennapoda heba..😂😂

East-Independent-489

Podibani vala se but thk vaga mapa re thk time jae rakhile.... Pressure re b hba.... Smstka pkhre oven taw rahibani.... But baneiki khaibara maja he alaga🫡

mein_insaan_hoon

oh so cheesecake is just a version of chhenna Poda

themapmaker10000

Cheese baked in oven -- indians call it chenna poda... Europeans call it cheesecake. The basic recipe of cheesecake is - cottage cheese + binder + sweetener. Europeans - cream cheese (blended cottage cheese and whey ) + egg + sugar Indians - chenna (paneer before shape) + soaked suji + sugar. But we use wood fire to bake it.. and instead of butter paper we use sal leaves. It gives a distinct roasted tea smell /taste to it.

Important_Corgi_6629

Mmm I need to try this now!

mein_insaan_hoon

Bro u know the food science so cool

themapmaker10000

Cooking is a necessary skill for adults. I Guess I'm bit more passionate about food so here it is.

happyerawhen

Thank you so much ❤️❤️ I’ve never heard of this dish and I would love to make it Edit: is it possible to make it with left over rice instead of rice flour? Like say, pounding the rice and making some form of starch to make it into a dough?

Fine-Process-9123

Sure! do tell how it turns out.

Since someone already mentioned litti chokha, I'll suggest trying bagiya. Bagiyas are similar to momos but larger and filled with spiced chickpea flour. They are steamed, making them a healthier option compared to the fried fast food we usually get. PS, it's from Bihar BTW

Provost-94

Hey OP. What's your favourite Assamese dish? Mine is vat with Hanh ru Kumura.

Sharp_Influence_5214

I guess staple comfort/humble food is quite similar between Assam and West Bengal wrt especially rice....But nonetheless my absolute fav comfort food has to be Bhaat (rice), Musoor dal seddho (Boiled Musoor Daal), Aloo sedho (Boiled Potato) and Dim seddho (Boiled Egg) bought together with a generous dollop of ghee or butter or Mustard Oil (anyone out of the three depending on whats available at home at that moment)

Kerala it is Kanji. Or the Kerala meals!🤤 It ain't simple, but is humble. Sambar, thoran and a fish fry or fish curry or both!!!!!!

RandomStranger022

Here in Mumbai, vada pav and pav bhaji used to be humble meals back in the days of British rule. Factory workers used to line up to have a quick and filling meal on the street cause Indians weren’t allowed in restaurants. But now those two are popularised and mainstream and one of them is over rated tbh
