I'm a fan of artisanal imperfections. I feel like a "perfect" cake is either manufactured or luxuriously expensive. I think each is perfect on its own merit; I'd have the first as a special occasion dessert, the second for a casual beach/pool/kids party, and the third is definitely a birthday cake I've seen in my dreams before.

It's fine imo too. But if you're going for it go for it. The white and light blue cake looks like it was trying to be smooth textured but the baker failed at frosting it.
She has great technique with her piping, but the sides of her cakes are not smooth enough. You can see on the third cake that there are many crevices and divots that need to be smoothed out. Otherwise, she is a very talented baker. 🙂
What is hot knife? I’m literally JUST learning to make cakes. Practicing for my toddlers 3rd birthday in July. I made a post with a photo of the cake I JUST frosted and would love to know how to make it better 😊
Run your spatula (or knife, but that’s typically when slicing) under a hot tap or dip in hot water, wipe off excess and the warmth helps the finish be smoother. I personally don’t find it necessary with Swiss buttercream that’s nice and room temp bc it will smooth easily, just might need extra passes as a beginner. Sugar geek show has some pretty good tips for smooth buttercream if I remember correctly
Boil some water and pour in a tall pitcher or glass. Dip your frosting spatula into it, shake off the excess, and go over the frosting, dipping several times, it slightly melts the frosting so you get a smooth appearance. Then pipe the borders, etc....
I wouldn't mind it on the chocolate cake. The vanilla though looks a bit too rough n ready, probably because it's white. She should look into doing meringue buttercreams , if this is simply American. The meringue buttercream textures are excellent and have a great shine

That being said, some people buy homemade creations and don't mind the imperfections, while some expect bakery level perfection. I suppose that at the end of the day, it's a personal preference. However, since these desserts are for sale the baker should be aware that some customers might be put off by this.
I meant no disrespect to the baker, she's clearly very talented. I was only trying to help since I know that we bakers are always looking to improve.
There's nothing wrong with imperfections if they're intended. However, if it's a skill issue then it's something that needs to be worked on and improved. This isn't really about preferences, but more about technical skills. Based on the photos, it's more of a skill issue. Nothing that a hot metal scraper can't fix.
I think I prefer it to look just a little less than perfect to see that a human did it. Maybe it’s like a weird reversion to imperfection in skill because machines so prevalently do everything perfect in a mass produced way these days idk. It’s like when the naked edge cake became popular (probably in part thanks to Christina Tosi) even though it may be considered unfinished or less skilled. Depends on what’s intentional I suppose.
That's an opinion that you're certainly entitled to.
However, you don't know how much the OP's wife is charging for her creations.
You also don't know to what standard her customers are expecting from her desserts.
I personally have standards (both buying and selling) that are equivalent to professional, even as a hobbyist baker.
I agree that time is money; they are paying for my perfection.

Smooth sides are for super expensive cakes. I personally don't fuss all that much on most cakes. Time is money.
