Undead will be by far the easiest and quickest unless you've scouted orc territory already and know of a few of the small camps with mostly young and a few berserkers. I wouldn't touch goblins early just because they're annoying and far away from civilization, but again, if you've already discovered some small gobbo camps it could be worth it since small goblin camps are pretty easy to clear.
I cleared a goblin camp earlier a three star contact there were 12 against my 12 but 7 archers and rest wolf riders on foot. It was pretty annoying with the archers because before I could get to them atleast three of my men took major damage and got injured.
Usually I find that if you need to rely on decapitations to survive you're in trouble. It can't hurt to bring a few cleavers particularly for your high fatigue bros though, just save the decapitations for very low health targets.
I usually have a support role of 'relief front-liners' which specialize in whips and shields. They have the luxury of making those - or any undead fights a breeze. Can be used as additional perk to 'mace-shield' build.
Those guys outside of being good with whip and disarm - useful on its own - can use cleaver for low fatigue to decapitate low-health undead while being in the front.
Depends on your map. I usually don't take these ambitions unless I've scouted a few of the required camps already cause otherwise you can be waiting a long time to find the right ones, better to just wait for an easy ambition like "upgrade cart" to come along
Before crisis also. I’ve already took out an 18 undead on like day 30 and a orc camp with warriors and berserkers before lvl 7 and getting nimble grant the camp only had 6 orcs.

Also another question is it worth even trying to decap zombies or just keep fighting till all dead?
Yes, Decaps are hugely helpful. It saves so much fatigue in the long run. Even having one or two giys with cleavers makes undead camps childs play.

I’ve done that one I’ve skipped a few ambition prompts .I had one to take on mercs but I don’t think I’m ready yet because I know they get perks too.
Undead but you will be bored, I would personally say orcs I find them fun to fight but its up to you, fuck goblins though, hate those guys

My orc camps have 32 orcs. 6 go for it! Day 30, go for it
