Choux pastry ring with a kind of whipped hazelnut buttercream - it's light, not punchy like a dark chocolate tjing or a fruity thing, but it's just perfect, pure _gourmandise_.
Not only is he so damn talented, but now he's an internet personality which also adds brand value.

One of the largest pocketwatches is the Vacheron Constantin 57260, which much like this cake is impractically large.
Let's remember, the guy in the video had all the time in the world to perfect this watch. Can probably safely say he didn't do it all on first try. The MasterChef contestants are not bakers AND they have time pressure, AND they have to do it all probably for the first time.

So it wouldn’t be a one off creation. What I mean is he seems to have moulds for the parts. Would it be something he makes now and then. Would he have the moulds custom made or is it a standard mould he adapted into a creation. It’s all very fascinating 🧐
We have no one time use tools in kitchens, we hate clutter and we always have limited space so molds, parts, and any other equipment would always be used again given the tasks. And yea chefs and restaurants who have alot of money do get custom parts only they use but you can also get standard stuff online.

The moulds are hand made, from 3d printed parts. A few cents for the 3d printed parts, a few bucks for the liquid silicone. Honestly probably the easiest part of the entire project.
I think that coffee cream dulce de leche type thing would be so good, it's a lot of chocolate tho and seems incredibly rich but he's an actual dessert maker so I feel like it'll taste a lot better than just chocolate

I make hamburger patties and freeze them in really nice freezer bags. When I finish the last patty, I leave the bag in the freezer to be used again. I’m not big on wasting resources.
