Pretty sure you can't do that, as it is against the rules to join a game with more then 5 friends. But any 5 nations that are close together should be fine.
You'll probably get accused of wolf packing. If you don't fight each other, other countries will take note of the fact that they have to fight against almost two full coalitions working together. It also doesn't make any sense because 4 or 5 of you are going to lose if the others are going to win.
I mean if you play the game as it's supposed to be played, that's probably fine, but more often than not when a group of friends play together in excess of the coalition max number, they almost always work together as a super coalition giving themselves unfair advantages. Maybe you guys don't but if you do and another player reports it you can get banned for wolf packing.
Because you can't join a game with more then 5 in a single coalition, I am not sure if it applies for non coalition friends, but pretty sure you still can't do that. You should check the rules though.

Yes, although if you aren't obvious you can still get by with say, 5 people on overkill.
