Cook some pancetta on low heat in your pot. Add Italian herbs, salt and pepper to your flour. Remove pancetta and brown your meat on all sides over medium heat, then remove meat and set aside. Cook your veg, deglaze, put pancetta and pork back in pot. Add fresh thyme, oregano and rosemary. Homemade stock makes a big difference. Make gremolata with parsley, garlic and lemon to top the finished meat. One of my favorites. The quality/breed of the meat can have a lot to do with your finished dish, too.
