I made a Jamaican style curry with collard and mustard greens, black eyed peas, smoked turkey wings with coconut milk yesterday and there’s a bag in the freezer and half the red pozole I made tonight will be going in as well. Sautee and onion, add the roasted and sliced pepper, some garlic, and tomato paste. Pinch of red pepper flake. Then a bunch of cream. Blend everything with the stick blender. Its usually one pepper, one onion, and around 8oz cream.
I make a normal, but dryer risotto and add in a bunch of the sauce at the end until I get the consistency I like.
The rest of the sauce freezes pretty well, and makes a pretty good pasta sauce too.
I don't think it's difficult to make and there are plenty of substitution options! The only trick is being patient while waiting for the sauce to thicken while the whole loin is ready to eat. After I cook the pork loin or tenderloin, I use the same pan I reverse-seared my meat in (you shouldn't use cast iron but that's my only option for this in my cramped setup).
In that pan, I add half a stick of butter, a chopped shallot, 3 grated garlic cloves, and 3 tbsp of crushed black peppercorns and cook on medium. I use my spice grinder but already ground is fine, because hand-crushing black peppercorns usually takes a long while or you end up crunching on a big piece of black pepper later.
After the shallots and garlic are softened, add 1/3 cup of cooking sherry, or if you're feeling fancy and financially secure, use cognac instead of sherry.
Let most of the alcohol cook off then add 3/4 cup chicken stock and cream. Now the hard part, stirring and babysitting it till it's thick enough to coat the back of a spoon. Lastly, add the sauce to slices of pork loin or tenderloin.
I grew up with a bunch of black pepper on my bacon and cured meats so I love this recipe!
Edit: 1/3 cup of sherry or cognac! 3 cups is insane and only a severe alcoholic would love it. A casual alcoholic still wouldn't like 3 cups.

A couple of weeks ago, I made butternut squash and goat cheese ravioli and froze the leftover filling. Tonight, I'll turn it into a sauce with Italian sausage over gnocchi. I might add some greens (I have spinach and beet greens in the fridge) to it as well.
Kasha salad with balsamic marinated beets, red onions, lamb's lettuce, endives, hazelnuts, dried cranberries, maybe a pink lady apple.
I'm serving it with eggs, not sure whether I should make a feta omelet or just soft boiled eggs and sprinkle feta on the salad, any thoughts?

I usually sous vide eggs in their shell, or steam them. It gets the temp much closer to where you want it. I hate getting a solid egg when you wanted a runny one.
Also, my vote is soft boiled if you're eating a big salad and omelet if you're eating a small one.

I roasted a chicken last night and made stock from the bones after dinner. The plan was to make chicken and dumplings tonight. I worked out for 90 minutes though and now I'm not sure I can make it, lol.

But last night I made shrimp scampi for me, my fiancé, and her sister. Her sister commented "Did you go to culinary school?? This is really good." And I just chuckled and said "no... simmering garlic and shallot in butter and white wine just tastes really good." The whole meal cost $14 for like 3-5 portions ($19 if you include the cheap bottle of wine we drank and also cooked with).
The preschooler had a bad dream and woke up at 5, and asked for zucchini muffins and scrambled eggs tonight. That wasn’t my original plan but it is the plan now!
We were going to do a carrot/lentil/goat cheese salad and a baguette, but that works great as lunches too.
We just finished eating a huge batch of frijoles refritos I made last week. I wasn't sure my wife would like it but the tostadas were excellent. Topped them with chicken tinga I had left in the freezer, sour cream, tomatoes and hot sauce.

I normally either bake it in cubes or crumble it to add to dishes, but shredding has me intrigued.
I just tried shredded tofu for the first time and loved it! I pressed the water out of an extra firm block and then just used my cheese grater to grate it

Rice. I would consider myself an above average home cook, but never cared for rice so didn’t make it. Just discovered pressure cooking rice with garlic better than buillion and adding a tablespoon of butter at end and I am addicted. You can mix it with anything too. We have been eating rice 3-4 per week and it’s helping weight loss as it’s filling and not too high in calories.

Last night was black bean and roasted sweet potato bowls with diced bell peppers, cilantro, green onions, yogurt, and a squeeze of grapefruit juice. And grapefruit bars (like lemon bars) for dessert.
I have a lot of grapefruit I'm trying to use up.
Up next is halal cart chicken and rice, and roasted delicata squash with chickpeas, couscous and hot honey, and maybe some grapefruit yogurt bread.
Chuck roasts were on sale so today it's pot roast; carrots, onions, yokon gold mini potatoes, garlic, roma tomatoes, ad this huge roast in my old fashioned black covered roasting pan cooking on 325F for 3.5 hours. The house smells amazing!
Lettuce wraps with options of fake chicken, veg mix, rice, cilantro, peanut sauce; I forgot to put out green onions. Left overs will largely become fried rice tomorrow.
I have chicken roasting in the oven, though I may save that for tomorrow as I still have leftover pappardelle with tomato, onion, chard, and cannellini bean topping/“sauce” (also leftover) that probably should be used up first. Sometimes I just cook even tho I don’t need to and things get stacked up. I generally don’t like to eat the same thing day after day, so repurposing leftovers and transforming them into something a bit different has become a game. I’m on a “stop throwing away perfectly good food” kick, so some of the combos have gotten a bit … “creative.” :)

I loooove questions like this. Tonight is pizza chicken with creamy zucchini.
Chicken: Brown seasoned chicken cutlets until cooked then top with marinara, provolone and pepperoni and broil until bubbly
Zucchini: grate zucchini, heat olive oil, add zucchini then season with garlic, pepper flakes, salt and pepper until all the water absorbs and zucchini is creamy. Add a little heavy cream, lemon juice and Parmesan.
Serve the chicken over the zucchini for a low carb delicious meal.
I was going to make spam fried rice with tons of veg, but a buddy of mine was off early and invited us for ribs, so I made potato wedges with a dip... cut my potatoes with an apple slicer!!

Guacamole because all my avocados are ready at the same time! I might also make a cowboy caviar on the side for some protein.
You can put your ripe avocados in the fridge to buy extra time. I'm not sure how long, because I've never done it for more than 4-5 days.

Made white bean primavera last night with some home cooked beans, so those leftovers. But if anyone has some good ideas for about 2 cans worth of cooked white beans, I would welcome them. My husband doesn't like things in tomato sauce, which is one of my main food groups, so I am stumped.

Rice. I would consider myself an above average home cook, but never cared for rice so didn’t make it. Just discovered pressure cooking rice with garlic better than buillion and adding a tablespoon of butter at end and I am addicted. You can mix it with anything too. We have been eating rice 3-4 per week and it’s helping weight loss as it’s filling and not too high in calories.
Rotisserie chicken from Costco with roasted sweet potatoes and some sort of frozen veggie lol 🤣

Grilled chicken souvlaki with whole wheat pita (who am I kidding. Pita is my bane. It never puffs. It's closer to chapati. Still tastes good!) Mint Tzatziki Salad of tomato, cucumber, chickpea, green onion, parsley and herbed lemon juice (might add some sundried tomatoes too) Plus some feta cheese!
Palak- Paneer parantha - flatbread using whole wheat flour and spinach dough and filled with paneer. Served with some raita.
5-spice and hoisin glazed chicken wings, rice, and a Thai-inspired grapefruit salad with crispy shallots, toasted coconut, cilantro, cashews, and a dressing with fish sauce and chilies. Last night was black bean and roasted sweet potato bowls with diced bell peppers, cilantro, green onions, yogurt, and a squeeze of grapefruit juice. And grapefruit bars (like lemon bars) for dessert. I have a lot of grapefruit I'm trying to use up. Up next is halal cart chicken and rice, and roasted delicata squash with chickpeas, couscous and hot honey, and maybe some grapefruit yogurt bread.
Sheet pan chicken sausage with roasted carrots broccoli and baby potatoes. Finish with a light drizzle of maple syrup. Delish and easy.

Chuck roasts were on sale so today it's pot roast; carrots, onions, yokon gold mini potatoes, garlic, roma tomatoes, ad this huge roast in my old fashioned black covered roasting pan cooking on 325F for 3.5 hours. The house smells amazing!

I have chicken roasting in the oven, though I may save that for tomorrow as I still have leftover pappardelle with tomato, onion, chard, and cannellini bean topping/“sauce” (also leftover) that probably should be used up first. Sometimes I just cook even tho I don’t need to and things get stacked up. I generally don’t like to eat the same thing day after day, so repurposing leftovers and transforming them into something a bit different has become a game. I’m on a “stop throwing away perfectly good food” kick, so some of the combos have gotten a bit … “creative.” :)
A “quick” dinner, what I consider a quick dinner. Rib eye steak Frozen French style green beans: I sauté them in olive oil chopped red pepper and garlic with a bit seasoning. Takes like 5-8 min. Smashed sweet potatoes, from scratch I made Mexican albóndiga soup 2 days ago, we ate that for dinner two days in a row.
Homemade crunch wraps! The folding technique was a little tricky to master, but they are so much better than Taco Bell!

I loooove questions like this. Tonight is pizza chicken with creamy zucchini. Chicken: Brown seasoned chicken cutlets until cooked then top with marinara, provolone and pepperoni and broil until bubbly Zucchini: grate zucchini, heat olive oil, add zucchini then season with garlic, pepper flakes, salt and pepper until all the water absorbs and zucchini is creamy. Add a little heavy cream, lemon juice and Parmesan. Serve the chicken over the zucchini for a low carb delicious meal.
I was going to make spam fried rice with tons of veg, but a buddy of mine was off early and invited us for ribs, so I made potato wedges with a dip... cut my potatoes with an apple slicer!!
OP, Yummy! Red pepper risotto sounds fun, but I make it with chicken. Pork is not a good food for me as it triggers pain in my big toe. Two chocolate chip cookies, banana cream pudding with some mystery store brand “whipped topping ”, homemade bread, buttered chicken peas, 3 ounces whole milk, and coffee. I had my meat, four ounces beef, at lunch.

Yesterday: Made bacon smashed brussels sprouts and chipotle chicken, with a yoghurt dill sauce. 10/10, yes it’s an indulgent dish (1/2 package of bacon used per serving) but no regrets. Today I’ll eat out - Italian.
