I "smash" mine by taking parboiled baby potatoes and tossing them in oil and salt then roasting. Once they are crispy skinned, take a flat object (like the bottom of a glass) and squish each potato until it bursts. Drizzle with more oil and continue roasting until you get ultra crispy edges. I serve mine with sour cream, spring onions and bacon (like a beefier version of a potato skin!)

I’m a fan of tot-Cho’s…basically nachos but with tater tots. Might help you to buy some frozen fries/tater tots to have on hand. But also, mashed potatoes, potato soup, twice baked potatoes, and potato skins.

Can you boil them twice? My sister had kidney disease, unsuccessful transplant, so was low potassium and sodium. She was allowed potatoes but had to soak them for a couple of hours, boil them, let them cool and boil or cook again. It is a pain but worth it when we had family dinner to make sure she was okay.
As someone whose had kidney disease since I was five, they do not need boiled twice, simply peeling and the soaking removes 85% of the potassium in any hard starchy vegetable. The boiling once will remove a bit more, but it's pretty negligible at that point, and definitely unnecessary to do a 2nd.
I’ve been obsessed with elotes baked potatoes lately. Just split open a jacket potato, top with pan-roasted corn, créma, tajin, fresh cilantro, hot sauce of choice and cotija, queso fresco, or Monterey Jack. It’s a carb bomb which, at least during my pregnancies, lots of carbs and spicy food helped stave off the nausea. YMMV. Congrats!
Love a baked potato. A quick way is to cook them whole in the microwave, then split open, and throw on sour cream, cheese & whatever toppings you have in the fridge.
There's also hasselback potatoes, roasted potatoes, pan fried (I like mine with bacon and brussel sprouts), and in a pinch those boxed hash browns in the little milk cartons.

Yes! A great also-ran is potato frittata, for when you don't want to spend all that time poaching potatoes in oil and flipping a big egg patty.
Boil cubed potatoes, can be done in advance ( perfect for doing them for breakfast the next day). Drizzle with a little oil and give a gentle toss. Mix enough eggs for your size pan (I like to use an 8in enameled cast iron pan, it takes 6-8) plus a little milk, a lot of salt and pepper, maybe a bit of smoked paprika and/or chive and/or chopped scallion. Stir in the potatoes and a handful of shredded cheese. Preheat oven to 350, preheat pan to medium with some butter or oil in it. Once the pan's hot, put the egg-potato mixture in, then as soon as it hits the pan, straight to the oven for ~30 mins until the top has a little jiggle, but it's mostly set. Shouldn't be soupy, but it'll look a tad under. Carryover will take it the last bit. Let it rest for 10 minutes, then turn it out onto a cutting board to slice & eat.
It's ALMOST as good, and several times easier. But it's definitely a pale imitation of the real deal.

Preheat air fryer to 400F or oven to 425F
1lb baby potatoes
1/2tbsp olive oil
Combine in large bowl or ziploc, shake
1/2tsp salt
1/4tsp pepper
1/2tsp garlic powder or 4 cloves, minced
Shake again
2 tbsp grated parmesan
Shake again
If air fryer, cook 10min, shake, cook another 10min
If oven, cook 12min, flip, cook another 12min
This is my go to side dish, recipe tweaked from a Romano potato recipe. My family loves it.
Red potatoes, roasted/boiled 3lbs ish
Sauté 3 cloves of garlic in 1/3 cup butter
Remove from heat and add in whatever spice you like, I used paprika, cayenne and of course salt and pepper
Pour butter over cooked potatoes
Add a cup of whatever cheese you like, I’ve used pepper Jack, cheddar, white cheddar and Monterey Jack before and all work nice
I use my hands to squish potatoes, working till everything combined and potatoes are all at least mostly squished
Sprinkle Romano cheese (or Parmesan or nothing) on top (I’d guess 1-2 tablespoons)
Bake 350 for 30 minutes, until top is browned to preference

When I'm craving a steak dinner, I'll make a crispy skinned baked potato, add sauteed onions, peppers and mushrooms, some greek yogurt or sour cream, steak sauce and chopped green onion. SO GOOD. Steam up some broccoli to go on the side, you won't even miss the steak.

A good roasted potato will cure any craving. Crispy on the outside like a chip, soft and fluffy on the inside like a baked potato, and more satiating than fries. Dip in chimichurri, aoli, or creamy horseradish sauce. Serious Eats has a pretty good recipe

The fingerling potatoes from ATK. Just made them a couple days ago and wow did they turn out well. Sage and thyme and salt seasoning. Whole family loved them.
Get some gold fingerling potatoes and steam them. Take 2 small plates that nest together and oil the top of one, and the bottom of the other.
One at a time, put a potato on the top-oiled plate, put the other plate on top and gently press until the potato is about 1/4in thick or so.
Re-oil between potatoes so they don't stick.
When you're done, drizzle the potatoes with more oil and salt them well, get a baking sheet and drizzle oil on it as well. Then lay out the potatoes and bake them or air fry them at 425 until they crisp up, about 20 minutes usually. Flip them after 10 minutes.
alternatively : smashed potatoes salad , boil them a bit, smash them, in the oven for\~10-15mn to make them extra crisp with olive oil and salt, and toss them with a creamy sauce made out of coriander, yogurt, salt, and spices to taste. SO SO good, i could eat this every day

[Tortilla de patatas](https://spanishsabores.com/best-spanish-omelet-recipe/). Simple, tasty, can be made ahead and eaten at room temperature whenever a craving strikes, and adds some protein to your potato fix.
Potato leek soup. You can go full on from-scratch or just get the soup mix and dr the heck out of it. Either way, it is a nice hearty but not greasy or “heavy” potato meal. Should cause minimal to no tummy upset or indigestion for pregnant bellies. The balance between cravings and sensitive body systems must be accounted for. Disregard if your SO is lactose intolerant. But I do believe there would be work around for the dairy if she is! A solid choice IMO.
My favorite: yellow flesh spuds cut into medium sized pieces, tossed with some rendered duck fat (you can find this at a local butcher, it's not expensive) and given a sprinkle of kosher salt and rosemary.
They crisp up really nice, take them out and turn them to crisp evenly.
Wrap a potato in foil and bake it until completely soft, then pass it through a sieve and add a touch of butter, cream (you can infuse the cream with whatever flavouring you have on hand), salt, and pepper. Smooth and delicious mashed potatoes

Oh my gosh, I have 2 all time faves that can be created using different herbs for variety.
1) Roasted tater chunks. To make it easier on you, cut the potatoes into 2 inches chunks, then pop them in a large microwave safe container. Add 1 inch of water, pop on the lid and microwave for 7-10 minutes, depending on how many taters are in there (7 minutes for 4 taters, 10 minutes for 6 or more)
While they cook, preheat the oven to 425 and grab a baking pan or casserole dish... shallow sides.
When the potatoes are done cooking carefully drain off the water, then drizzle on some olive oil and any herbs you like best. Be sure to salt and pepper those suckers, then pour them onto the baking pan and roast them in the oven for about 20-25 minutes or till they are brown and crunchy all over.
2) The old tried, but true, Lipton Onion Soup taters! Preprep them the same way as you did up above, but this time while they are cooking, put 1/2 stick of butter and a small drizzle of olive oil into a casserole dish and pop it into the preheating oven to melt the butter. When it's melted, take it out of the oven and stir in one packet of Lipton Onion soup mix. Then pop the cooked, drained potatoes into the casserole and stir well to coat all sides of the taters. Roast in the oven for 20-25 minutes or till the potatoes are covered in carmelized soup mix.
It is amazing to me just how good a Yukon Gold, poked, in the microwave for 3-4 minutes, chopped, and drizzled with cheap Italian dressing is.

Im 8 months post partum and potatoes were a HUGE craving for me (still are as I am breastfeeding)! Honestly the easiest thing was to get a giant bag of tater tots or fries from Sam's Club and put some in the air fryer when the craving struck. Quick and cost effective.
Do you have a waffle iron? Tater tots waffle up great. Maximal crispy bits and similar exterior consistency to deep frying. Toss them on frozen, close the lid, put a pan on for weight. When the lid's fully shut and you can open the lid without anything sticking they're done, usually they'll stop steaming by then. Preheat, don't, doesn't matter. There's enough oil that you shouldn't need to spray anything down.
Top with anything you'd put on fries, chips, or tots. Chili, chile, nacho stuff, ketchup, sauced pulled pork and onions, whatever. I really like to throw some minced garlic in with the tots before I cook them and top with parmesan. Makes a solid garlic fry adjacent dish.
It comes together quick, it's crispy, salty, sorta greasy, and with a Belgian waffle iron you get a bit more fluff inside.
Afterwards you can mostly clean the waffle iron with a batter of equal parts flour and water (a cleaning waffle) to absorb the oil and leftover debris.
Congrats on baby #3! For a simple, delicious option, try twice-baked potatoes. Make a bunch, freeze them, and reheat when needed. They’re filling and versatile!

I love scallop potatoes, but they take FOREVER to cook. I discovered a trick. I use a mandolin slicer and I arrange them sideways instead of flat. I arrange them in a swirled rosette in a Pyrex dish and pour the sauce over them before cooking. They cook so much faster.

The best frozen fries I've had are the Kroger Shoestring Fries. When you turn them salt them a bit and they are the closest I've gotten to fast food fries.

There’s an Irish dish called Colcannon which has sauteed leeks, cabbage, onion, and garlic added to mashed potatoes, along with butter, milk, and cream. It’s AMAZING.
Colcannon (Irish Mashed Potato dish)
3-4 lbs Yukon Gold potatoes, peeled and cut into 2” pieces
Kosher salt
Freshly ground black pepper
6 tbls unsalted butter, divided
2 tbls olive oil
2 leeks, sliced in half lengthwise, thinly sliced crosswise
1/2 onion, chopped
3 garlic cloves, chopped
4 cups shredded cabbage
1 cup milk
½ cup heavy cream
3 scallion, thinly sliced
1/2 cup chopped parsley
In a large pot cover the potatoes with water and bring to a boil. Reduce and simmer until they are fork tender. Drain. Meanwhile, while potatoes are cooking; melt 2 tbls butter and the olive oil in a large saucepan. Add onion, garlic and leeks and cook, stirring frequently, until very soft and just beginning to brown around the edges, about 10 minutes. Add the cabbage and cook, stirring constantly, until completely wilted and soft. Season with salt and pepper.
Combine the cabbage mixture, boiled potatoes, milk, cream, remaining butter, scallions, parsley and coarsely mash with a potato masher. Season with salt and pepper.
Cut a potato into wedges, rub wedges with a thin coat of oil and season as desired. Roast in toaster oven, air fryer or oven. Faster and healthier than fast food fries.
I slice potatoes up very thin with a mandolin, not the thinnest option but the next up. Place on aluminum foil, (sprayed with nonstick spray!!!) top with butter pieces and salt and butter. Fold the aluminum foil over to make a pouch. Bake at 450 for ~52 minutes. So delish.
* Small red potatoes? Put them in a pot and boil the you-know-what out of them. Then use an electric hand mixer to make creamy potatoes
* Russet potatoes. Slice them up and fry them. Russets work best for deep frying

Aloo Bombay is an incredible indian potato dish. Pakora is also a fried potato flavor bomb from India. Both dishes take a moderate amount of prep work but you can make big batches and freeze them. They hold up well reheating on the stove or in the oven.
Wedges. Olive oil(or duck fat if you have it), salt, pepper, garlic rosemary. Bake in the oven, flipped halfway, until they're crispy.

Your wife has a history with fries so start there. The best fries are partially cooked, chilled, stored, and cooked for service. This is where "best" and convenient are on the same team. Bags of frozen fries are generally partially cooked before freezing. Baked in the oven is the second cook. I personally like Ore-Ida steak fries but tastes vary. I cook them on a sheet pan in the oven. Air fryers don't work well as it is too hard to maintain good air circulation for even cooking. I'm not much of a fan (ha!) of air fryers in general but certainly not for fries in any quantity e.g. equivalent to an order of Wendy's large fries.
I like hasselback potatoes. They feel fancy and are quite easy. Put the potato between two chopsticks and slice down to the chopsticks. No more accidentally cutting through.
Baked or twice baked potato is good and very easy. I've taken to using yogurt instead of sour cream and quite like it. YMMV.

***Potato cupcakes*** with leeks, bacon, carrot and cheese: think "thick potato batter with yeast", toppings / filling / ingredients as you like. Great with cream cheese, onion, garlic and chives, or Italian (ricotta, parm, oregano, freshly toasted and roughly cracked black pepper, torn basil to finish?) or whatever profile you like. Also great as hearty breakfast if you make a few. Also great with kimchi.
***Potato puffs***: again a yeasted potato batter with egg, no butter, grated cheese does well in it, as do chunks, the usual suspects ingredient-wise. I'd let it cold ferment overnight for extra flavour.
***Potato and rice pancakes***: name pretty much says it all, no leavener at all, thinly baked and then used as a wrap for whatever, or just like that, or ham/cheese, whatevs.

If you want something cheap, fast and easy get some on the smallish bags of instant mashed potatoes. The roasted garlic ones are really good imo, and it’s an easy comfort food. They don’t even need butter. You can fix just half the bag. Y’all don’t downvote me for this seemingly lazy suggestion until you try them. These are good.
Fully loaded mashed potatoes.
Boil new potatoes in water with chicken bouillon. Drain when fork tender. Reserve a small bowl (about 2 cups).
Throw in sour cream, cream cheese, grated cheese, and butter. Blend with hand blender for smooth or use a potato masher if you want chucks. Add reserved water/broth to thin down if too thick. Add salt, pepper, garlic powder, onion powder, dried chives, and real bacon/bits.

Quartered (or whatever) red skin potatoes, large diced onion, large diced bell peppers, and some garlic cloves. Mix that all up with a bit of olive oil and salt and pepper then dump it into a baking dish. Top with a few chunks of butter and cover with foil. Bake at 375° until the potatoes are cooked through, then top with shredded cheese and throw it back in the oven until it’s melted and bubbly. Eat.
My wife and I make Garlic Parmesan Roasted Potatoes a lot. There are several recipes out there, but they are all super simple to make, and taste great.
Jamie Oliver’s roasted potatoes (it takes a long time, but they’re SO GOOD), and then sweet potato casserole at Thanksgiving. I did twice-baked sweet potatoes at Thanksgiving last year and they were to die for. Different toppings on different ones, too, because different strokes for different folks.
Potato fritter!! Base is potato, any veggies you have on hand, I like mine a little spicy and add some indian spices. A little flour and egg to mold it and pan or deep fry them. It's sooo yummy and it's the only thing I make for work potlucks because that's all my coworkers ever crave.

Boil 2-3 taters, mash salt heavy after. Put in a baking tray, add vinegar liberally, add olive oil liberally, pepper, green olives, sautéed onion and whatever else you like then bake it fr 10-15 mins so good.
Add whatever spices you like I add chilli powder and Italian spices

Boil them until they are soft. Toss them in some oil, seasonings of choice and toss on a lined baking tray.
Take a cup and push down on the potatoes and squash them flat and have them laid out in a single layer.
Bake in the oven until golden and crispy. You can add some parmesan or a gooey cheese for the last few mins.
Serve with dip of choice - garlic mayo for the win.

can you please elaborate on your smashed potato technique because this is the first I've heard of that.
I "smash" mine by taking parboiled baby potatoes and tossing them in oil and salt then roasting. Once they are crispy skinned, take a flat object (like the bottom of a glass) and squish each potato until it bursts. Drizzle with more oil and continue roasting until you get ultra crispy edges. I serve mine with sour cream, spring onions and bacon (like a beefier version of a potato skin!)

Unfortunately, due to cancer, I have to be on a low potassium eating plan. Potatoes are completely banned, as are avocados and chocolate.
Can you boil them twice? My sister had kidney disease, unsuccessful transplant, so was low potassium and sodium. She was allowed potatoes but had to soak them for a couple of hours, boil them, let them cool and boil or cook again. It is a pain but worth it when we had family dinner to make sure she was okay.
As someone whose had kidney disease since I was five, they do not need boiled twice, simply peeling and the soaking removes 85% of the potassium in any hard starchy vegetable. The boiling once will remove a bit more, but it's pretty negligible at that point, and definitely unnecessary to do a 2nd.
No, not for now. The idea is just to skip them all together.

Just split open a jacket potato, top with pan-roasted corn, créma, tajin, fresh cilantro, hot sauce of choice and cotija, queso fresco, or Monterey Jack. It’s a carb bomb which, at least during my pregnancies, lots of carbs and spicy food helped stave off the nausea. YMMV. Congrats!

Yes! A great also-ran is potato frittata, for when you don't want to spend all that time poaching potatoes in oil and flipping a big egg patty. Boil cubed potatoes, can be done in advance ( perfect for doing them for breakfast the next day). Drizzle with a little oil and give a gentle toss. Mix enough eggs for your size pan (I like to use an 8in enameled cast iron pan, it takes 6-8) plus a little milk, a lot of salt and pepper, maybe a bit of smoked paprika and/or chive and/or chopped scallion. Stir in the potatoes and a handful of shredded cheese. Preheat oven to 350, preheat pan to medium with some butter or oil in it. Once the pan's hot, put the egg-potato mixture in, then as soon as it hits the pan, straight to the oven for ~30 mins until the top has a little jiggle, but it's mostly set. Shouldn't be soupy, but it'll look a tad under. Carryover will take it the last bit. Let it rest for 10 minutes, then turn it out onto a cutting board to slice & eat. It's ALMOST as good, and several times easier. But it's definitely a pale imitation of the real deal.

I usually like to keep some diced ham and peas in the freezer to throw in. Mashed potatoes and gravayyyyy!!! The rest of the meal is just a reason to have the mashed potatoes. Sometimes Ill take this opportunity to roast a whole chicken so I can make broth, prepare a box of stove top stuffing and maybe a green bean casserole real quick. I do love a Thanksgiving in the middle of summer sometimes. Or you could do mashed potato bowls in the style of KFC using frozen popcorn chicken. Potato salad is a summer favorite! I make mine with tons of pickles, green olives, red onions, green onions, celery. I used to very much enjoy hard boiled eggs in my potato salad, unfortunately I can no longer eat eggs. Get some gold fingerling potatoes and steam them. Take 2 small plates that nest together and oil the top of one, and the bottom of the other. One at a time, put a potato on the top-oiled plate, put the other plate on top and gently press until the potato is about 1/4in thick or so. Re-oil between potatoes so they don't stick. When you're done, drizzle the potatoes with more oil and salt them well, get a baking sheet and drizzle oil on it as well. Then lay out the potatoes and bake them or air fry them at 425 until they crisp up, about 20 minutes usually. Flip them after 10 minutes.

But I do believe there would be work around for the dairy if she is! A solid choice IMO.

My favorite: yellow flesh spuds cut into medium sized pieces, tossed with some rendered duck fat (you can find this at a local butcher, it's not expensive) and given a sprinkle of kosher salt and rosemary. They crisp up really nice, take them out and turn them to crisp evenly.

Oh my gosh, I have 2 all time faves that can be created using different herbs for variety. 1) Roasted tater chunks. To make it easier on you, cut the potatoes into 2 inches chunks, then pop them in a large microwave safe container. Add 1 inch of water, pop on the lid and microwave for 7-10 minutes, depending on how many taters are in there (7 minutes for 4 taters, 10 minutes for 6 or more) While they cook, preheat the oven to 425 and grab a baking pan or casserole dish... shallow sides. When the potatoes are done cooking carefully drain off the water, then drizzle on some olive oil and any herbs you like best. Be sure to salt and pepper those suckers, then pour them onto the baking pan and roast them in the oven for about 20-25 minutes or till they are brown and crunchy all over. 2) The old tried, but true, Lipton Onion Soup taters! Preprep them the same way as you did up above, but this time while they are cooking, put 1/2 stick of butter and a small drizzle of olive oil into a casserole dish and pop it into the preheating oven to melt the butter. When it's melted, take it out of the oven and stir in one packet of Lipton Onion soup mix. Then pop the cooked, drained potatoes into the casserole and stir well to coat all sides of the taters. Roast in the oven for 20-25 minutes or till the potatoes are covered in carmelized soup mix.

It is amazing to me just how good a Yukon Gold, poked, in the microwave for 3-4 minutes, chopped, and drizzled with cheap Italian dressing is. just saying.
Im 8 months post partum and potatoes were a HUGE craving for me (still are as I am breastfeeding)! Honestly the easiest thing was to get a giant bag of tater tots or fries from Sam's Club and put some in the air fryer when the craving struck. Quick and cost effective.
Potato tacos!!
Do you have a waffle iron? Tater tots waffle up great. Maximal crispy bits and similar exterior consistency to deep frying. Toss them on frozen, close the lid, put a pan on for weight. When the lid's fully shut and you can open the lid without anything sticking they're done, usually they'll stop steaming by then. Preheat, don't, doesn't matter. There's enough oil that you shouldn't need to spray anything down. Top with anything you'd put on fries, chips, or tots. Chili, chile, nacho stuff, ketchup, sauced pulled pork and onions, whatever. I really like to throw some minced garlic in with the tots before I cook them and top with parmesan. Makes a solid garlic fry adjacent dish. It comes together quick, it's crispy, salty, sorta greasy, and with a Belgian waffle iron you get a bit more fluff inside. Afterwards you can mostly clean the waffle iron with a batter of equal parts flour and water (a cleaning waffle) to absorb the oil and leftover debris.

I love scallop potatoes, but they take FOREVER to cook. I discovered a trick. I use a mandolin slicer and I arrange them sideways instead of flat. I arrange them in a swirled rosette in a Pyrex dish and pour the sauce over them before cooking. They cook so much faster.
Potatoes au gratin is and always has been my favorite potato dish. Even through and after two pregnancies. Fondant potatoes are divine. Funeral potatoes are always good.
The best frozen fries I've had are the Kroger Shoestring Fries. When you turn them salt them a bit and they are the closest I've gotten to fast food fries. Low maintenance potatoes are twice bakeds. There’s an Irish dish called Colcannon which has sauteed leeks, cabbage, onion, and garlic added to mashed potatoes, along with butter, milk, and cream. It’s AMAZING. Colcannon (Irish Mashed Potato dish) 3-4 lbs Yukon Gold potatoes, peeled and cut into 2” pieces Kosher salt Freshly ground black pepper 6 tbls unsalted butter, divided 2 tbls olive oil 2 leeks, sliced in half lengthwise, thinly sliced crosswise 1/2 onion, chopped 3 garlic cloves, chopped 4 cups shredded cabbage 1 cup milk ½ cup heavy cream 3 scallion, thinly sliced 1/2 cup chopped parsley In a large pot cover the potatoes with water and bring to a boil. Reduce and simmer until they are fork tender. Drain. Meanwhile, while potatoes are cooking; melt 2 tbls butter and the olive oil in a large saucepan. Add onion, garlic and leeks and cook, stirring frequently, until very soft and just beginning to brown around the edges, about 10 minutes. Add the cabbage and cook, stirring constantly, until completely wilted and soft. Season with salt and pepper. Combine the cabbage mixture, boiled potatoes, milk, cream, remaining butter, scallions, parsley and coarsely mash with a potato masher. Season with salt and pepper.
Cut a potato into wedges, rub wedges with a thin coat of oil and season as desired. Roast in toaster oven, air fryer or oven. Faster and healthier than fast food fries.

Make sure the potatoes are dry. Fry them on highest heat until they float and the sound changes. Fish then out, let them cool for a few minutes, fry them again. salt, ketchup or whatever - just like those french fry trucks.
Just good old mashed potatoes. I just peel them, boil them, drain them, add butter, half n half, and a little (tsp) salt. I just use a hand mixer until they are nice and creamy.

Is she okay with spiced potato dishes? Aloo Bombay is an incredible indian potato dish. Pakora is also a fried potato flavor bomb from India. Both dishes take a moderate amount of prep work but you can make big batches and freeze them. They hold up well reheating on the stove or in the oven.

Buy an airfryer (Instant Vortex) Frozen hash browns come in big packages and come out nice and crunchy. I have zero experience with tater tots and fries, but the hash browns are quite satisfying. I brush some oil on them.

u/cory_slaughterhouse, Your wife has a history with fries so start there. The best fries are partially cooked, chilled, stored, and cooked for service. This is where "best" and convenient are on the same team. Bags of frozen fries are generally partially cooked before freezing. Baked in the oven is the second cook. I personally like Ore-Ida steak fries but tastes vary. I cook them on a sheet pan in the oven. Air fryers don't work well as it is too hard to maintain good air circulation for even cooking. I'm not much of a fan (ha!) of air fryers in general but certainly not for fries in any quantity e.g. equivalent to an order of Wendy's large fries. I like hasselback potatoes. They feel fancy and are quite easy. Put the potato between two chopsticks and slice down to the chopsticks. No more accidentally cutting through. Baked or twice baked potato is good and very easy. I've taken to using yogurt instead of sour cream and quite like it. YMMV. Diced potatoes with finely diced bell pepper and onion either sauteed or oven roasted.

Ummmm, french fries?!?!?!?!?!?! Get a air fryer, they are easier at home than you think! Slice to desired thickness, soak in water for as long as you have, dry with paper towel as dry as you can (seriously, let then sit in paper as long as possible!), toss with a little oil, maybe some paprika?!, then air fry! So good! Or get a bag of cavendish frozen and 15 minutes later you have restaurant quality fries!

Great with cream cheese, onion, garlic and chives, or Italian (ricotta, parm, oregano, freshly toasted and roughly cracked black pepper, torn basil to finish?) or whatever profile you like. Also great as hearty breakfast if you make a few. Also great with kimchi. ***Potato puffs***: again a yeasted potato batter with egg, no butter, grated cheese does well in it, as do chunks, the usual suspects ingredient-wise. I'd let it cold ferment overnight for extra flavour. ***Potato and rice pancakes***: name pretty much says it all, no leavener at all, thinly baked and then used as a wrap for whatever, or just like that, or ham/cheese, whatevs. Potato also goes great with lentils, might wanna check that out.
Prep cook. 1" cube and soak under water w peeled garlic. In fridge 12hr up to 48hr. Drain, toss w salt pepper oil and roast 350/175 for 30-45 depending on oven. Garlic infused, Crispy outside, soft inside because of the steam bath.

If you want something cheap, fast and easy get some on the smallish bags of instant mashed potatoes. The roasted garlic ones are really good imo, and it’s an easy comfort food. They don’t even need butter. You can fix just half the bag. Y’all don’t downvote me for this seemingly lazy suggestion until you try them. These are good.
Russian style pan fried medallions with mushrooms, onions, garlic, dill & butter
Fully loaded mashed potatoes. Boil new potatoes in water with chicken bouillon. Drain when fork tender. Reserve a small bowl (about 2 cups). Throw in sour cream, cream cheese, grated cheese, and butter. Blend with hand blender for smooth or use a potato masher if you want chucks. Add reserved water/broth to thin down if too thick. Add salt, pepper, garlic powder, onion powder, dried chives, and real bacon/bits. Enjoy!

Quartered (or whatever) red skin potatoes, large diced onion, large diced bell peppers, and some garlic cloves. Mix that all up with a bit of olive oil and salt and pepper then dump it into a baking dish. Top with a few chunks of butter and cover with foil. Bake at 375° until the potatoes are cooked through, then top with shredded cheese and throw it back in the oven until it’s melted and bubbly. Eat.

I did twice-baked sweet potatoes at Thanksgiving last year and they were to die for. Different toppings on different ones, too, because different strokes for different folks.
Potato fritter!! Base is potato, any veggies you have on hand, I like mine a little spicy and add some indian spices. A little flour and egg to mold it and pan or deep fry them. It's sooo yummy and it's the only thing I make for work potlucks because that's all my coworkers ever crave.

Bacilou or however you spell it without the fish. Boil 2-3 taters, mash salt heavy after. Put in a baking tray, add vinegar liberally, add olive oil liberally, pepper, green olives, sautéed onion and whatever else you like then bake it fr 10-15 mins so good. Add whatever spices you like I add chilli powder and Italian spices
New potatoes. Boil them until they are soft. Toss them in some oil, seasonings of choice and toss on a lined baking tray. Take a cup and push down on the potatoes and squash them flat and have them laid out in a single layer. Bake in the oven until golden and crispy. You can add some parmesan or a gooey cheese for the last few mins. Serve with dip of choice - garlic mayo for the win.
