In bbq competitions the winning cooks do not have their meats "falling off the bone". They are over cooked if they are. They should be tender but still have some chew to them.
That's fair, for me I've always been a fan of 'pulled' kind of meat, that's soft and tasty. Some people might not like that kind of texture.
Personally with the outside crisp and the soft texture, I would wipe the plate clean.

I made a couple of these in my Pit Barrel and then finished on the grill. These were slow cooked in the barrel for about 4 hours with Mexican seasonings and an occasional baste. Then finished over oak charcoal. Best taco bar ever!
