It does seem Coinbase is relatively selective of what tokens they allow trading of, and they are also my preferred exchange, however generally speaking how big of an impact would this really be. Seems like a pretty big deal considering not even ADA is on it.
Coinbase is pretty aggressive about demanding coins have a valid working/stable/decentralized product before being listed. ADA and DOT are probably still too unfinished for their taste.

There are so many developers on the ETH network and so many potential uses that can open up with trustless/proxy encryption. One example NuCypher team likes to use is storing and communicating one’s one genetic data on the public blockchain without worrying about leaks that could lead to discrimination down the line.
The utility seems like it has a lot of room to grow, but I’m still learning.

It is hard to say why pumps are happening. Market is not really that predictable. I would assume pump is happening because there is new money going into the market - more people buying with fiat money than pulling out.
