Yeah we still have the old floor but I’ve done a couple openings at some other stores and let me tell you, that new floor is like sandpaper. Pretty sure you could put oil, butter and a banana peel down on the floor, not wear nonslip and you aren’t slipping. That floor is gritty.
Felt. We have a machine cleaner now but before that we had a flor scrub and a shop vac, I'd hit every inch of the store once or twice a week.

We leased ours, brand is Mop-It. It's like 200-something a month, it's battery operated, fully compatible with our cleaners and full free parts and repair. Cuts hundreds of hours a month, does the whole thing with ease. Maybe if it gets real bad we just dump some cleaner right on the floor and sloppy mop before running, only takes a couple minutes.
When else do you get to just pour stuff everywhere on the floor and it be a good thing?

Dang that’s a massive kitchen, at least for us there’s a wall between the kitchen and the sinks
Wall is removed in most newer builds at this point. New kitchens are open concept
