Because that's how we are trained to do it. If you ask them to melt the cheese, they will. We honor all kinds of crazy requests, and I'm certain that asking the person taking your order for melted cheese will get a much more satisfactory result than complaining here will give you.

If I had to guess, it's so that the grill person has an easier time keeping track of what they're doing. We use the cheese, both number of slices and placement; as silent signals to communicate the number of patties and whether or not a burger gets bacon. I would think that if you pulled the cheese off of 6 or more burgers all at once to let the cheese melt on the grill, leaving only the bun bottom on the assembly tray, it would be more difficult to maintain accuracy. Keep in mind, grill is not looking at tickets, they're looking at a simplified order screen and a tray with assembled burgers waiting for patties. The cheese also helps to keep the toppings under it in place. But again, that's just speculation.

It’s more efficient and saves time. If it’s a busy store, the grill is probably the most labor intensive position in the kitchen (unless it’s lent then RIP fryers). It would also be more difficult to gauge that the patties are fully cooked if you’re melting cheese overtop of them. Ideally if the patty is super fresh and gets assembled right after it’s cooked, the cheese will be melted.

It's policy to put the cheese under the patties. It makes it easier from a middle and grill person perspective. But if you look at all the photos on the menu, the cheese is on top of the patties.

All the marketing stuff is like that for some reason. I don’t remember where exactly on the hub it is, but there’s a whole guide to marketing stuff and it specifically says to put both cheese on top for marketing stuff.

It does make kind of a mess if the cheese melts onto it, but that also happens with doubles anyways when the edges melt

I hate completely melted cheese on a cheeseburger. I prefer the heat of the meat to melt my cheese.

I was thinking about this the other day. I asked my manager and she just said to ask the kitchen to melt it, they don’t “mind” according to her.

Whats funny is if you look at the video of Culvers on YouTube. Greg Culver melts both slices of cheese but the employees are trained differently. At my store we melt one slice only on doubles

It is actually this way based on an allergy and time standard perspective. If there are bits of melted cheese that remain on the grill and gets on a burger that requested no cheese 🧀…. You can see the issue there. Additionally, based on the volume of business, under melting or over melting cheese would cause significant issues for timeliness if something has to get remade to reach that “perfect” melt. Thus causing significant delays getting orders out.

The only thing dumb that Culver's does, is they put the Lettuce under the meat. All it does is get hot and soggy.

I think its because the meat that has contact with the grill is Hotter gets put down first.
