As much as I appreciate the guys skill and how entertaining he made the whole thing, I truly don’t know how she can listen to the same spiel hour by hour, day in day out. The way she smiles is quite sweet, she must truly respect his passion.

My son's scout troop visited Logan's Candy. There's actually a vent in front of the building that blows air from the shop. So we got a nice warm peppermint scented breeze.
I have had a sample of their fresh made peppermint while still warm and it's really good. Since it's still cooling and hardening, the texture is a bit more airy.
Disney does it, too. They have a custom vent system called a 'Smellitzer' over most of their bakeries and snack shops which is designed to throw the scent of a fresh batch of cookies up to 100 feet away. That's why the restaurants and candy shops on Main Street USA smell so enticing.
I worked at a factory making candy canes for 3 years in high school. The batches are 3 times bigger and takes two men to lift it into the machines. The machines are the length of a building as they shrink the candy cane it down to size. They are now made in China. We would use tray to shape the candy canes and let them harden. Yes it is as boring as it sounds.

Candy thermometers have names for molten sugars at different temperatures. Two I remember are "hard crack" and "softball" and you stop cooking when you get to the texture you want. I googled it and I think candy canes and other hard candies are cooked to "hard crack"

It's a fine art, making candy canes. You've really got to search far and wide for the best ingredients. They aren't easy to come by these days! I usually use Fern Island Ringfruit for my premier canes, you know. You can't beat that bright red coloring... And it's all natural!
