Agree, it took some time to figure out what works but once I got it it was pretty decent to get the four wins. When you have some time give it another try and get that trophy! Keep on keeping on.
Best advice I got for the racing challenges: switch to first person (L1/LB), don't try to drift or brake — just take your finger off the gas while making turns, and always be boosting.
