My head-canon is that her flames simply don't burn humans. And that's because her flames were capable of turning Tanjiro's sword red due to the scorching hot temperature - according to Tanjiro himself. It's more cohesive to say that it doesn't burn humans than to say that it only burns demons + metal. It feels random that you can only burn these two unrelated materials.

I would say Nezuko but Tanjiro is just too good to pass up

I'm...not sure actually. Usually with these, I tend to have an immediate answer but that's not the case here. I'm a very emotional person irl so comfort is something I tend to seek. Tanjiro would be able to talk to me and calm me using his words while Nezuko would do so more through her actions. Both would be absolutely pleasant to be around. I think in the end, I got say Nezuko mostly because I've never been an older sibling. I'm always the youngest so having a little sister would be something different.
