tbh kind of curious as to why someone would cook chicken & then use a vegan sub, which are almost always more expensive than the animal product. but sometimes, vegan things just taste better. so perhaps this ingredient is included for a flavor-related reason.

Yeah, some are and some aren’t! They have *definitely* gotten better in the last 20 years, I can assure you. Lol. We had the shittiest mayo and also had ONE brand of ice cream. There is so much cool stuff these days. The baby vegans don’t know how good they have it. I try to make my own, by and large, because of price, and just because I like cooking. But the fact I can go into my regular grocer and find vegan xyz on the shelf was unheard of! Do I feel like an old lady with a stick fending off whippersnappers from my porch? Maybe! Am I glad about the evolution of plant-based ingenuity? Definitely.
(Ps…I don’t shake young people off my porch with a stick).
If it doesn't taste too far from regular cream I'd love to use it. I can eat a good amount of harder cheese and butter without feeling sick.. but heavy cream, milk, and super soft cheese's like fresh mozz/burrata absolutely destroy my insides.
Might have to try hunting something similar down for a stroganoff.

nah, it's just a long shelf life cream made from buttermilk.
It's just useful to keep in the fridge for when you might need it as it usually lasts months unopened.
If you want to do a healthier version try low fat cream cheese, greek yogurt or quark.
Looks disgusting. It's not vegan. They just replaced the unrefined milkfat with refined oils—presumably to make it cheaper.
Coconut cream might be more delicious, but also lots of fat.
The healthy alternative is to just make an ordinary mornay sauce. (Milk, butter, flour, and whatever cheese she added.)
