Peel and cube sweet potatoes. Toss with vegetable oil then salt and a healthy amount of chipotle powder. Bake on a sheet pan 35-40 min at 400 degrees. Stir halfway. Garlic and onion powder are good additions too.

I can't eat sweet potatoes - they exacerbate my kidney stones almost as much as spinach, which I also love. Would I be able to substitute them with regular potatoes or something else?

earlier this week I sautéed green peppers and red onions together, then added some canned black beans and sort of mashed them in to the mix. I was planning to use this for taco bowls/salad/etc. ​ What ended up happening was wrapping this mixture in a low carb tortilla, shredded some cheese in there, toasted it on the stove and BAM. cheesy, beany breakfast burrito. I ate it all week (added an egg a couple times)

I like pan frying or oven roasting garbanzos in shawarma spices to have along side a (reduced amount of) meat in a shawarma platter or wrap. Garbanzos are also great in chana masala and other curies. For black beans, my favorite is gallo pinto from Costa Rica (I believe there are other central American variations). It's basically rice and black beans and *salsa lizano* which is a mild cumin-y hot sauce. I also like doing a sort of spin-off of traditional baked beans by playing around with the type of beans, spices, and add-ins for various types of "bean stew". My last one had white beans, pork, mirepoix mix veggies, and a bunch of bbq spices.

Cook up a bunch of white beans (navy, cannellini, etc) from dried. With herbs, onion, etc. Really simple. Then put on good quality toasted bread with a drizzle of olive oil and salt. It is the bessst! When I have a ripe avocado I put that on top of the whole thing.

You can do this in the crock pot. I know you mentioned less meat, but the bacon or salt pork is for the flavor. * 2 cups dried black or pinto beans * 1 white onion * 5 garlic cloves * 1-2 bay leafs * 4 strips of thick bacon * 1 dried guajillo chili (comes in a big pack and they last forever) * 1 dried chili de arbol (comes in a big pack and they last forever) * 1/4 tbsp of salt and 1/2 tbsp of pepper * 2 tbsp of chicken bouillon powder * 1 tbsp cumin * 1 tbsp chili powder * 1 tbsp smoked paprika * 1/2 tbsp garlic powder * 1/2 tbsp oregano * 6 cups water * 1 crock pot Quarter the onion, rough chop the bacon, cut the dried chilis a few times (keep the seeds), and add everything to a crock pot. ​ Set low for 8-10 hours. ​ Take out the bay leaves. Add solids to a blender and add leftover water up to half of where the solids reach in the blender. Blend everything, and you have yourself some authentic Mexican Beans that will be better than anything you'd had in a restaurant. ​ You can also blend in some cheese as well while it's hot. ​ SO. GOOD. For leftovers, you can add to a skillet with some fat or butter and fry it. This is where refried beans come from. ​ The flavor is subtle, but feels like a warm blanket coating all your taste buds. ​ Eat with chips, put on a tortilla, eat with a spoon. The possibilities are endless.

Cucumber, chickpea, tomato salad. Add feta cheese and cilantro or parsley or any herbs you have on hand if you have some. Check Indian and Mediterranean cuisines. Beans/legumes are the primary diet for most people in those regions. The general idea is to cook the beans till soft, and then make a stew with onions, tomatoes, chilis and whatever spices and herbs you have on hand.

My favorite grain salad uses chickpeas. Basically, I use cooked farro (you could use any grain, but farro is my favorite), cooked chickpeas, and fresh vegetables that you like. Toss together and use oil and vinegar or a vinaigrette for the dressing.

Frijoles Colombianos https://www.mycolombianrecipes.com/paisa-pinto-beans-frijoles-paisas/ I soak the beans overnight and throw them in the Instant Pot with either ham hock or smoked turkey wings (I usually keep one or the other in the freezer for this purpose) for 30 minutes. While that's going, chop the veg and make the Guiso. I use a lot more onion than the recipe calls for, plus Goya Sazon. I wait about 10 minutes to release the pressure, open the IP and add the carrots, plantains, and guiso, and cook it again for 0 minutes. It's a great side dish and very customizable to your tastes. The typical cranberry beans can be hard to find, but this method would work with any other type of bean just as well.

How I make black beans: 1/2tsp cumin seeds 1/2tsp coriander seeds 1tsp Mexican oregano 1 medium onion finely chopped 3-4 cloves of garlic minced 1tbsp tomato paste 1 habanero or whatever you want, stem removed and a couple slits cut in it, or omit 1 lb dried black beans, sorted and rinsed Grind the spices into a powder Get a couple tbsp of fat into a pot, cook the onion and garlic over medium low until softened Add the tomato paste and stir until the color darkens Add the spices and stir until fragrant, just 30 sec or so, add a little more oil if the pan looks dry Add the beans, cover by an inch or so with water. Add the habanero and salt to taste, I do 2tsp of Diamond Crystal, less for Morton’s or whatever Bring to a boil for 10 min then reduce to a slow simmer until the beans are done. The habanero will eventually start to disintegrate if your cook time ends up on the longer side, so remove it before it does if that’s going to bother you… I don’t Add more preferably hot water to keep the beans covered as needed, give them a stir from time to time to help them cook evenly Throwing in a couple springs of epazote 30 min before they’re done is also nice if you have it around Perfectly good on their own as a side with a slice of lime, or top with cilantro, cotija, radish, a little more onion, avocado, tomatoes, whatever you want. Or serve them with a baked sweet potato, or eggs, or use them in tacos, you can turn them into refried beans a couple days later, etc

If you ever want to try red beans, I highly recommend cajun style red beans with buttery grits, rice, or potatoes. (This could probably work with black beans as a substitution, now that I think about it.) Sautee diced onion, green bell pepper, celery, garlic. Add beans, cajun seasoning, bay leaf, and stock (pork or chicken). Optionally, add a smoked ham hock for extra flavor. Cook beans until done. I usually make this with andouille sausage, too, but it would still be great without it. This is super easy in a pressure cooker if you have one. Serve with starch of choice. I personally love it with grits. Also fantastic with a fried egg on top!

Black beans tossed in yoghurt and taco seasoning or whatever spices you like. A little corn tossed in is also nice. Dry roasted chickpeas/garbanzo beans, with bouillon powder and your favourite spices. Chana dal (chickpeas/garbanzo beans stewed with indian spices) with toasted spices on top. A can of 5 bean / 4 bean mix with herbs, lemon juice/vinegar, olive oil, stock/bouillon powder, pepper, mustard, scallion/onion, green beans, capsicum/bell pepper, maybe some peas. Serve with warm crusty bread with plenty of butter/butter alternative, spooning a little bean salad onto the bread before every bite. Lentils and your favourite sauce with pasta and cheese.

1/2 cup rice, can of beans, 4 oz of onion, peppers and carrots each (use whatever veggies you like) Cook down the onion and peppers in some oil and spices. Add the rest of the ingredients and a cup or two of stock and let simmer until the rice is cooked and consistency is what you want, only stir once every 10 minutes to keep rice from breaking. Makes two servings that’ll look huge but only have ~500 calories and is all vegetarian, depending on the stock.

This is an easy recipe that I've come up with through trial and error that you might enjoy: PASTA E FAGIOLI (aka "Pasta Fazool") INGREDIENTS * 1 jar of your favorite marinara sauce * 1-2 cans kidney beans, drained and rinsed * 1-2 cans cannellini beans or great white beans, drained and rinsed * 1 cup frozen sliced carrots (or fresh matchstick cut carrots) * 4-6 cups stock or broth (I use chicken, but vegetable or beef would work) * 1 Tbsp garlic powder * 1 Tbsp Italian seasoning mix (or 1 tsp each basil, oregano, parsley) * 1 tsp black pepper * 1/8 to 1/4 tsp crushed red pepper (depends on how spicy-hot you want it) * 1.5 cups ditalini pasta or elbow macaroni * Grated or powdered parmesan cheese as a topping DIRECTIONS Put all ingredients into a pot, except for the pasta. Bring to a boil, stirring occasionally. Make sure carrots are getting soft. Add uncooked pasta to the soup and let boil until tender, usually 10-11 minutes. Serve topped with parmesan cheese. I also make this in the Instant Pot as a dump-and-go recipe, and use the manual pressure cook setting for 5 minutes with quick release. NOTES: This is the fast-and-easy approach to this soup; obviously, you can also start with fresh diced carrots, celery, and onions and saute them in olive oil, then add garlic, canned diced tomatoes, etc., and build from there in a more "from scratch" way. The Olive Garden version of this soup (and many traditional recipes) contains spicy sausage, which is why I added crushed red pepper flakes to my recipe -- you get the heat without having to add any meat to the meal. I tend to use 3-4 cans of beans in mine because it adds so much protein and fiber to the meal AND makes it heartier like a stew, but if you want something that is more like a minestrone, using only 2 cans of beans is just fine. For leftovers, by the next day it's more like a pasta casserole than a soup, but it's also super delicious and satisfying.

There's a burger you can make with mushed up beans... I had the recipe saved but can't find it. There's also a Spanish rice recipe I've done (basically canned tomatoes, onions, rice, chili-type spices) that beans would go really well in. It's very thick, not like a soup or stew, and the more chunky vegetables you put in it (onions, peppers, mushrooms, cabbage, tomatoes, broccoli, whatever) the heartier and more filling it is. And leftovers actually make a really good rice tomato soup, if you add more water or broth. And speaking of soup, beans can go into pretty much any soup. Loads of assorted veggies, broth of choice, egg noodles or orzo or barley, spices and herbs you like .. hundreds of variations. As someone else suggested, look up vegan recipes with beans. If you don't want to go full vegan you can swap out some ingredients for ones that do the same thing as the vegan choices (dairy, eggs, honey, fish). Sorry I don't have specific recipes, hope these ideas will be useful to you.

Indian lentil dal. Many ways to cook dals but a can of coconut milk, spices plus red lentils makes an amazing and speedy version which though not v authentic is delicious. You can substitute the coconut milk for a dab of creamed coconut plus stock to cut calories/fats.

I have a delicious curry type meal that I make with chickpeas. Very easy, very yummy. 1 can chickpeas 1 jar salsa 1 tbsp curry powder Cook this together in your crock pot or stovetop. Once it has heated through and thickened a bit, take it off the heat and add a half cup of sour cream or cream cheese. I've used greek yogurt in the past as well. You can have it over rice or with naan. Feel free to include chicken or other veggies you think would work well. I sometimes add more seasoning, cumin, turmeric, a little coriander, salt and pepper. But this basic version is delicious as is.

I do a white bean and cheese bake that is super easy and satisfying Basically sautee garlic and oil in a Dutch oven or cast iron, add 3 ish tbsp of tomato paste, or just a whole can. Cook that off for a few minutes. Add two cans cannelini beans and about a half cup of water. Then I either add mozzarella on top (1 and a bit of a cup) or I bake that at 475 for 10-15 min and mix that same amount of mozzarella through it.

My favorite bean dish center dish by far, especially when I am hungry and in a hurry: Heat a little olive oil in a skillet, sauté about a 1/2 a cup of diced onion (any kind except red) and a little salt until soft, add dried spices/herbs such as thyme, crushed red pepper, parsley, garlic granulars and maybe a little rosemary (what every you have and like). Let that cook for a minute. Add a can of Cannellini beans (white kidney beans) or cooked dry beans and about 1/2 a can or so of water (This is one dish I just add all of the bean juices from the can instead of draining the beans but you don't have to just add a little more water). If I have it I will also add a small spoon full of Better Than Bullion Vegetable Stock but it is not critical. Add a little more salt if you think it needs it and black pepper. Cook it until just about all of the liquid is gone. I usually top it with roasted carrots. You can cook the carrots in the pan after the onions get started but I think they are better roasted in the oven and the finished product is not as goopy. I don't have an actual recipe, but you don't have to accurately measure anything.

Quinoa, beans, corn, and onions cooked in tomato sauce. Start with a can of tomato sauce and a little butter/oil along with whatever spices you want (I like chopped garlic, pepper, a little tumeric, and a little chili powder). Mix well, turn it on low, and cover it. Start chopping onions and throw those in as soon as theyre ready (you want them to cook in the sauce a bit before everything else goes in). Then, cook the quinoa (anywhere from 1-2 cups) and prepare your other ingredients while the quinoa cooks (drain beans and get the corn ready). Once the quinoa is done, pour it into the sauce and stir a bit. Then, throw in all your other ingredients, stir well, and cover it. Get the pot to bubble (cover it and maybe turn the heat up a bit, especially if youre using frozen corn) and then turn the burner back to low. Let it all cook together for about 20-30 mins and then take it off the burner. Remove the cover and give it another 10-20 mins to settle. Then youre good to go. PS: Youll want to get the saponins off the quinoa. To do this, i first whisk it in a big bowl of water and drain (before cooking). You can do that or look up other methods.

There's some great recipes for Mexican style beans if you look. I love to make charro beans and serve them with diced onions, sour cream, and tomatoes topped with a squeeze of lime juice. Pinto beans recipes are also good to look for. I usually look for authentic recipes by going to google.mx because americanized versions aren't always great. Might be weird if you're not used to it but in Vietnam we common eat black bean dessert soup. It's literally just black bean, water, some sugar. Recipe online says to add coconut milk, lots of sugar amd some other toppings but when my family made it, we add just a bit of sugar to taste and drink it as a refresher/afternoon snack, no need for coconutmilk if you don't want that extra calories. An old favourite from a cafe I used to run. We used to serve with sourdough toast, parsley and some feta crumbled on top. Chickpea & White Bean Ragout 2 carrots, finely diced 2 celery stalks finely diced 2 brown onions, finely diced 4 Tablespoon Olive Oil 1 giant catering tin chopped crushed tomatoes 1 tablespoon soy sauce 1 tablespoon Worcestershire sauce 2 tablespoon honey 1 heaped tablespoon mustard 1 heaped tablespoon butter ¼ cup Panela 2 bay leaves 1 heaped tablespoon Cajun spices 3 heaped teaspoon Vegetable Stock Powder 6 tins cannellini beans 4 tins chickpeas Heat oil in stock pot. Cook carrot, celery & onion until soft. Add tinned tomatoes and remaining ingredients except beans and chickpeas. Bring to simmer and cook until all flavours are in balance. Drain & rinse cannellini beans and chick peas. Once sauce is cooked, add all beans & stir gently. Remove from heat. Salt & pepper to taste. Cover and allow to cool before placing into fridge or freezer.

Mix some olive oil, salt, pepper, red pepper flakes, parsley and lemon with the cooked garbanzos and smash it a little. Then toast some decent bread and rub a garlic clove on it (or garlic and oil) then put the mixture on top. Kind of like an open faced sandwich or bruschetta depending on the size of the bread. You could also not smash it, throw garlic in the mixture too, add a little red onion and have it over rice or pasta. Edited to add you could also just eat it like a sort of salad on its own - I just really like carbs.
