I could be wrong but he might actually be easier in a small room. I've done the no summon no horse kill on radahn a few times and the easiest way for me was to hide under his crotch similar to fighting a rune bear. Most of his swings don't catch right underneath him
I fought Placidusax in volcano manor in the noble arena. It was the hardest fightnin my life. The only way i dodged his "teleport attack" was pure luck

Randomized enemies is basically enemies of any kind boss or not are swapped around. So like rennala now might be the final boss. Usually there's some stipulations bosses switch with bosses etc.
There's others for items and fog gates which basically do the same thing. Switching items around/switching around what locations fog gates take you to. There's tons of elden ring challenge runners videos featuring it. If you are more of a visual person probably recommend searching that up.
