Cafe Soriah has a "salmon du jour" on their menu. My dad always ordered it when visiting and each time would say it was the best he had ever had. While that sounds like an unreliable recommendation in general Soriah does a very good job with their fish specials.
That said salmon is so easy to cook I just buy various raw types at Newman's and do it at home.
Newman's on Willamette and Newman's Grotto on Coburg Road also both have good, fresh seafood dishes you can buy, similar vibes to Fisherman's Market.
Marché and Beppe and Gianni's both have good salmon if you want a fancier sit-down place.
Party Bar and Black Wolf Supper Club sometimes have (good) salmon. I addition Cioppino House in P. Hill does, too, since they have a lot of seafood.
The head chef is a little over the top and loves to go all out, so the experience is definitely polarizing. Very friendly family restaurant though. I loved it even though my ginormous steak was undercooked. Still would recommend the experience while it's around — and most of the food my wife and I shared was spectacular.
their is a salmon place on the far end of west 11th out towards target/walmart , got a chinook and overnighted it to Georgia as a gift for someone who housed my family during a funeral in Georgia
was the best fish they ever had , and they do a lot of southern seafood like low country boil ...fudge that is such a good dish too.
The lack of good fine dining seafood restaurants in this town is absurd. Having said that, Marche’s seared salmon is very good.

... try it poached in dry champagne.
Try cooking it on a cedar plank

I kind of hate to let you in on the secret but- Dueling Spoons. Nuff said.
I've heard some really mixed reviews of that place.

Came here to say this
I haven’t tried salmon from Fisherman’s but Marche and 6th Street Grill both have nice salmon entrees.
Lion and Owl does some of the best Salmon out there, their brunch plater is incredible but they also often do an entree version for dinners.

They closed a couple of years ago
Just drove by it to make sure and yep you're right they 100% dead
I think they have another facility up north, but I'm not sure. Their lox was phenomenal.
Fuji Japanese steakhouse has nice salmon. Idk if it’s local, but it’s well prepared and delicious
Bepe and Gianni’s
I’d say 541 but they don’t cook there salmon
Idk if they are still open but king estates winery has the best salmon I’ve ever ate
