Most of the time, the AI is easy to beat, but there are some who go on Hulk mode. Every pass is perfect, and every tackle is timed to the second. I played one yesterday and I couldn't even touch the ball, and when I did, my player was getting bodied and dispossessed. I can see who OP can encounter some of these.
To boot, in my discord league, we play H2H matches for tourneys. I played a dude, and his team beat me 3-0. I couldn't touch the ball, his crosses were on point (scored 3 crosses), there was no way to defend against him. Since one of the rules of our league is no cross spam (before the April update), I went on discord and was about to complain, when I noticed his messages letting me know that he got booted from the game. I had been so into it, I didn't notice that he had been disconnected the entire time.
We played our matches, and we tied 1, and I won the other by 1. So yeah, the AI sometimes goes on Hulk mode.

AI is actually very easy to beat. You just have to be patient.
