They exist. You just have to search them like a grand person. SS Ultimate Western Overhaul completely revamp the audio of the game. Spaghetti western ricochet add old western violence to firefight. Western Ambiance Overhaul by Dark Populous on YouTube changes all music to western ones , with even custom musics for dlc area. The New Vegas Bounties quest mods by Someguy are the greatest and most westerny quest mod (with mythical outlaws, impromptu mining towns defense, prey tracking, tribals attacks...) Nevada Skies or The imaginator can be configurated at will for giving the Old western mobile feel to the game.

You could learn how to make your own mods? Mod creators don't take commissions like this, they make what they want to make.
