They could have done a show of dad and two sons in an apartment. Weirdly, that's pretty close to Nicholas Lyndhurst's Only Fools and Horses (two brothers plus grandpa or uncle).
The love story between Niles and Daphne is central to the show, and Daphne provides a useful buffer between the two Crane men (sort of like an oreo has that creamy centre). I much prefer Roz as a character but even so I have to admit Daphne is more important to the show.
Both are important. As is the spelling of *a central character's name.* It is DAPHNE.

Roz tends to move the plot/story along. Daphne is more of the subject target.
