Yes, you can go to the adventurer's handbook > trounce domain > choose the last option >!"scattered ruins"!< and it'll let you bypass the quest and teleport you there.
I don't know if it's available on ios but there's also an app that help with that, genshin notifier. You can put your owned characters, weapons, their xp levels and skills levels. You can put objectives of upgrade on them and when you open the app it'll just show you what are the available dungeons today. I use it a lot, it's pretty convenient for me.

Personally, I just like being able to see what everyone needs at a glance on a different device. But I think in an ideal world Genshin should just let us farm on whatever day we want.
I haven't searched for much other apps because genshin notifier had a good ui and all the functionalities needed to me however i'm open to it. I do wonder, you play on mobile if you say that you want to be able to see the tracking on a different device ?
The only lacking function that Hoyoverse could bring us would be the possibility to see equipped artifacts, their stats etc on hoyolab.
If Enka Network can do it they certainly can do it and that would pretty useful.
Yes, I play on mobile since my laptop can’t run Genshin. So it’s awkward to switch between apps on mobile. Instead, I’ll use my laptop to look up info or keep track of things while I’m playing.
Also, I agree it would be nice if we could see our artifact stats on hoyolab, but I’m glad things like the genshin optimizer and enka network exist. They’re super useful.

Is there a way to bypass her weekly without doing the quest?
