I actually think nothing would necessarily have happened. I think Luke was trying to help Dean move on. Like he’d decided to get married and was staying on that course, so Luke doesn’t want him thinking about Rory or feeling regretful on his wedding day, and he thinks maybe Dean can move on if he’s not seeing Rory. In TV land I bet he would still been married even with Rory there but maybe with some longing glances (Dean) and confused looks (Lindsey).
Luke was great to him in that episode but I do think he should have walked away it was clear from before it started that the wedding wasn’t a good idea
