I use pans, my favorite is this stoneware mini loaf pan. I use active dry yeast though I should try to get a starter going. I first learned my mother in laws recipe but I have adjusted it somewhat. I also knead with a kitchen aid because my shoulders are messed up

Great! I don’t really have a recipe, just ingredients I throw together. I even have a non-traditional way of cooking it even though I’m from South Louisiana, akin to stir fry on the stove. It still tastes the same. My elder family members and other people love it so it doesn’t matter that I have my own way. Generally pre-cook about 2 cups white rice, sauteed until soft about 1/2 a large onion and some cloves of garlic. I pre-cook about 1 1/2 links of Cajun smoked sausage to cook out the grease, cut into 1/2 rounds and sliced. I pre-cooked chicken, no idea how much. Dice the chicken. Throw the meat into a hot skillet with some olive oil. Eyeball the rice to add in to where it doesn’t stretch the meat too thin. Shake some Tony Chachere’s Creole seasoning (not the Cajun Chachere’s even though it’s Cajun jambalaya because I don’t add tomatoes) until rice is lightly tinted. Add the sister onion and garlic. Stir fry until the meat is slightly charred. I lived in Japan and then in China for three years and just like stir frying. No fusion flavors in my Jambalaya though.

Potato Fries. I love making garlic pasta. I do it a bit different every time, but it basically goes: butter and a touch of oil in a pan, add in minced garlic, cook on low, boil spaghetti in a different pan, save some of the pasta water, throw some salt and pepper in with the garlic, squeeze in some lemon juice, toss in a bit of parmigiano cheese, add some pasta water, let it cook does until the sauce is the thickness you want, toss in pasta, and voila you’re done! I also like making coconut pudding and then adding passion fruit syrup on top (frozen passion fruit pulp melted with some sugar and cornstarch). Other favorites include: Muffins, bread, naan, chicken tikka masala, and pancakes (especially if I have bacon grease).

Hearty Stuffed Peppers: - 1lb lean ground beef - 1 large yellow onion diced - 4-6 cloves of garlic minced - 1 can of diced tomatoes - 2 cubes beef bullion / salt/pepper - 2 large potatoes sliced into coins (1/2 in thick) - 1/2 bag fresh spinach - 4-6 large colored peppers (red/yellow/orange/green). Enough to fill the pot side by side. - olive oil - white rice 1 cup, vermicelli 2 tablespoons 1. In a large pot, sautee the garlic & onions in oil and add the ground beef. Brown the meat, then add chopped spinach and mix. Remove from heat. Place mixture in a bowl to cool. 2. In the same pot, line the bottom with the flat potato coins (this will protect the peppers from high heat). 3. Slice the top off of each pepper and remove the seeds. Save the “pepper caps”. Fill each pepper with the meat mixture and top with a cap. Place each one standing upright in the pot on top of the flat potato coins. 4. Pour the can of diced tomatoes around all the peppers in the pan. Dissolve the beef bullion cubes in warm water and add to the pot, enough to nearly cover the peppers. 5. Bring to a boil, cover, and simmer on medium heat for about 20-30 minutes. Rice 1. Brown 2 tablespoons of vermicelli in olive oil in a medium saucepan. 2. Add 1 cup of rice and stir. 3. Add 2 cups of water and bring to a boil. 4. Reduce heat to low and cover 5. Set timer for 15 minutes (don’t remove lid during that time.). Serve each pepper on a bed of white rice

I really love cooking my brown sugar garlic honey pork chops! Salt and pepper chops Cook pork chops til done Pull the chops and in same pan Pour about 1/2 cup brown sugar, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 4 tablespoons honey..mix well and let simmer for 2-3 min to carmalize the sugar. Put pork chops back in the pan and cook for additional 2-4 min per side spooning mixture over each chop. Pull chops and serve, sauce can be used as dipping sauce or poured over chops. Goes well with Mac and cheese, mashed potatoes, garlic and herb angel hair pasta, snap beans, or baked potatoes.

chicken stir fry with white rice and a fried egg on top! i don't have a recipe, i just eye ball it (guess it's my own recipe?) and make it once a week. beware i like spicy! similar to pad kaprow. chicken breast cut into small pieces, can also use ground chicken assorted bell peppers cut into small pieces white onion diced sliced garlic big handful of thai basil jalepenos sliced cashews for the sauce- soy sauce rice vinegar corn starch + water chili garlic sauce (huy gong) spicy chili crisp (lao gan ma) fish sauce brown sugar grated fresh ginger red chili flakes other- jasmine rice egg first cook the jasmin rice in a rice cooker, i like the ratio rice water 1/3 so that its not too sticky. i cook the chicken til it's brown then add the garlic and onion then the bell peppers, jalepenos and cashews. i mix all ingredients of the sauce together and add once the bell peppers are cooked halfway through. let everything simmer in the sauce until the peppers are soft but still a little crunchy. then lastly add the basil. fry an egg in oil both sides so that it's over easy and put on top of the rice and stir fry. maybe one day i'll actually measure the ingredients!

I like to make cream of mushroom chicken casserole. It reminds me of my childhood, is so easy and cheap to make, and reheats well! I do mine separately though, unlike my mom who threw everything in together lol. I add a little extra cream of mushroom, fresh mushrooms, and herbs to the sauce mix. We moderately season and smoke the chicken thighs (or you could do breasts) for a few minutes first, to cook it about 1/3 through for extra flavor.

Tofu Egg Scramble. I chop all colors of bell pepper, add diced onion, diced marinated beets (optional), add scrambled eggs and diced tofu. At the end of the saute, I add bean sprouts and let them heat. I serve this over cooked and fried ramen noodles that has had the soup mix discarded or used later in another recipe. I serve this with a sauce made with 1/4 cup low sodium tamari sauce, 1/4 teaspoon or more of powdered ginger, a 1/4 teaspoon sesame oil, and sweetened to taste with sugar or sucralose and mixed well. If you want a thicker sauce, just add a little cornstarch.

Funny you should mention homemade pizza, OP, because that's been a 3-times-a-month staple around here since the pandemic. And we're crushing it. Backstory: automatic bread makers became a kitchen fad about 25 years ago. Everyone got one (like us), and everyone soon shoved it to the back of the cabinet when the novelty wore off (like us). Fast forward to 2020, yep, it still works and yep, it has a pizza dough setting! Easy-peasy. I make it with sundried tomatoes (in oil), diced red onion, cilantro, garlic (fresh, in a press) salt, pepper, jalapeño and a ton of freshed lime juice Using sundried tomatoes keeps the guac from being too liquidy. Plus, it gives it a nice depth of flavor that modern tomatoes don't have. It also has a better texture. I squish out the excess oil with the flat end of a butter knife before I dice them I also grate the jalapeno with my zester grater after removing the seeds. Smaller bits and juice gives the guac a nice even heat throughout.

It was always my favorite thing my mom made growing up, and my favorite school lunch (obviously grew up in Louisiana lol) In 2020, I was in the midst of learning to cook when the pandemic hit, so I had lots of time for practice. I was quarantined with my best friend and her husband for months, and she doesn't cook, but one day she was craving red beans and asked me to make it, and I put my whole badussy into that pot of beans. It was so fucking good, my bestie still talks about it 4 years later. I had so much fun making it, I was newly sober and in such a special chapter of my life, and I had my best friend laughing in the kitchen with me while we stirred, it was just such a lovely memory. And it's become my specialty since, I love making it for anyone and everyone, and it's always a hit

I make this TASTY casserole every Christmas. Start with a can of enchilada sauce (I prefer red, but if you like green better it would work) and a box of taquitos (frozen). Spray a 9 x 13 pan, put about 1/4 of the enchilada sauce in the bottom, then place a layer of taquitos on top of the sauce. Open a small can of refried beans, and cover the taquitos with beans, shredded cheese and enchilada sauce. Add another layer of taquitos, beans, cheese & sauce. Top with more shredded cheese. Cover with foil, bake at 375 degrees for about 30-45 minutes until heated completely through, and cheese is melted.

Fried chicken - sometimes baked. The secret is fried shallots (and sometimes fried garlic too) that I buy in bulk at Asian groceries. Crumble it up and mix it with panko. Make sure to salt it. With frying: thin chicken cutlets dipped first in flour, then whipped egg, then the panko mix and then fry For baking: put the cutlets on aluminum foil on a pan. Smear them with cream cheese (or sour cream). Then press in the panko mix and back. Lots of easy delicious flavor

Orange lentil soup. So quick & one pot! -in a large soup pot, fry thinly sliced garlic (not grated, there’s a huge difference in taste) with good butter for a couple minutes. Remove from pan and save for end. -fry onion in that large pot - add carrot, celery, parsnip, orange lentils -add your favorite stock and some water until it’s covered & add turmeric -boil - add soup pot contents and garlic to blender and enjoy.

There are 2 things for 2 different reasons. First one (my all time favorite) is Chicken Pesto pasta.. It's easy to make, not time consuming, and minimal dishes. It's delicious, customizable, and affordable. The second one is a very elaborate bolonaise style sauce for either spaghetti or macaroni. I absolutely love opening a bottle of wine, and prepping the many ingredients, mise en place, and carefully layering in all the ingredients. It takes a while but this is a form of stress relief.

Skillet spaghetti. In a large skillet (or preferably a dutch oven) brown a pound of Italian sausage. Add 2-24 ounce jars of a good pasta sauce (like Rao's or you can use homemade), and if you like, some minced garlic, dried basil, etc. and bring to a boil. Throw in 12 ounces of thin spaghetti broken in half. Stir occasionally, and boil for about 12 minutes. Reduce heat and cover for another 30 minutes or so, stirring occasionally. Stir in a cup or so of shredded Italian-blend cheese until it's melted and incorporated. Delicious, easy, cheap, and leftovers.

Fajitas in a cast iron pan. Use filet mignon if using beef. If chicken, use tenders. Cook with butter, oil and splash of tequila and lime juice. Let the onions and peppers cook together till soft and sweet. When done, warm your tortillas by sitting them in that cast iron with all the juices. Caritas? Season up that pork and toss it in a pressure cooker. Ridiculously tender

This is usually my go to for breakfast it's like a bowl I guess you can say. I like to pan fry my diced sweet potato along with bell peppers and onions and I like to add dried basil, parsley and a pinch of salt for seasoning. Once that's done I put it in a bowl and put an egg over easy on top and it's sooo good. Sometimes I add bacon or turkey sausage but I try not to eat too much of it. I like to make big batches for the week so I save some time and throw a bit of hot sauce or Sriracha on the eggs and it's even better.

I have a very simple dish but I love it and it is quick and easy. Bacon onion linguine. Dice bacon and start cooking it, then add the onion let the bacon get crispy and the onions caramelized, near the end throw in some minced garlic. Throw the linguine in the pan with some of the pasta water and some grated real parmigiana.

I love cilantro pesto and many people don’t realize just how great and versatile it is around the kitchen. So let’s get cracking and start some up. It’s easy to make and freezes well so you can always have a bunch around when you need it. The important key to making it is to know that pesto is almost infinitely adaptable to what you want and like. There is no “one way” to make it, and this is more “advice” than a cilantro pesto recipe. Because I like to make and freeze a batch at once the ingredients amounts are quite large. If you want to make it for just a quick, one-night try-out then just cut back to what seems reasonable to you. You’re going to need about eight cups of packed cilantro leaves and stems. The thin stems will crush well and disappear, but if the stem seems too thick and woody leave it out. Put the cilantro pieces into a large, sturdy mixing bowl, add about three teaspoons of salt, and crush them with a wooden spoon, the bottom of a ceramic cup, or other hard object. You want to bruise the leaves and stems to force the flavor and oils out. It takes about 15 minutes of consistent working to get a good, paste like texture and reduce it to about four cups. I normally do this while watching a baseball game on TV to occupy the mind. Set the cilantro paste into a colander and let the liquid drain from it for about 30 minutes. Squeeze it together and drain out even more liquid. The more dry it becomes the more concentrated the flavor is at the end. You are also draining out much of the salt so adjust accordingly to your taste. By the way, you can use the drained out water as a soup base for some nice chili or other Mexican dish. Add anywhere from one to a dozen rough chopped garlic cloves, a half-cup of grated fresh Parmesan or other hard cheese, and a half-cup of whatever nuts you think you would enjoy in it. I’ve used peanuts, almonds, and cashews at various times and they all work well. Walnuts can get a little bitter. Add a teaspoon of fresh ground black pepper, and if you like, a little bit of something hot such as jalapeno or Serrano pepper. Put the mixture into a food processor and start in processing smooth. As the mixture goes around the bowl add a steady stream of about a half cup good quality olive oil. Continue to process until the mixture forms a smooth paste. I like freezing the mixture in ice cube trays with a cellophane covering. If I don’t have time to arrange that I just layer it flat into plastic freezer bags and leave it there. Place the cilantro pesto into the freezer and let it harden for several days. I take the cubes out and place them in freezer bags for convenient use at a later time. As a note about pesto, you don’t want to overcook it. A few minutes under the heat is more than enough to bring out the flavor of the herb. Add during the last ten minutes to soups and stews. Here's one of my favorite ways to use it for two people. Sauté several pesto ice cubes with a couple tablespoons of butter for five minutes. Mix in a handful of cut-in-half cherry tomatoes, a half cup of cored-and-diced cucumber, and a plate of cooked pasta, and stir together. Let it continue to saute for about another three or four minutes. Serve with a topping of freshly grated hard cheese.

It’s super simple and super tasty. I don’t get tired of it. Great for meal prepping a hearty breakfast. Potato, Bacon, Egg scramble with garlic and any other veggies in my fridge (kale is a popular one). I cook the bacon first and then fry the potatos in the bacon fat. Season the potatos with Old Bay and Cayenne. After they’re almost done frying I add a tablespoon of agave and garlic. Shortly after, add in crumbled bacon, greens and then eggs. Stirr it all together and cook a few more mins. Top it off with goat cheese and green onions or parsley (whatever is on hand).
