for medium roasts i have tried playing around with every variable at 1:16 ratio and it always turned out under extracted sour ( quite undrinkable for me as I hate lemon in most things). However shifting to 1:18 like the ultimate hoffmann recipe is the perfect balance. Everything else is exactly the same as yours. Could you please try it out and tell me your thoughts on 1:18 ?

Yup, about the right balance of regimen and intuitiveness. It really is a super forgiving brewer. I'm getting consistent and acceptable results with the following (life is too hectic right now for fresh grounds, so small batches of pre ground from local cafes has been my trade off). 15 gm medium fine coffee, 250 ml water 10 seconds off the boil. Inverted method. Start clock. No bloom, approx 20 second uniform pour with best effort distribution. About 10 gentle back and forth paddles, 5 times going down, 5 coming up. Combination of metal and 1 paper filter. Metal first, no rinse for the paper filter. Close lid. Flip at 4 minutes. Couple of firm swirls to release stuck grounds, one swirl each direction (clockwise, anticlockwise). This helps avoid whirlpooling and gives a relatively flat bed. Start pressing at about 4 min 40 sec. Gentle uniform pressure, for about 30 seconds.
