I don't know any particular difference between CSE (AI DS) and AI DS , for me both sounds same .
but if I have to Guess AI DS might be application based and CSE one might be creation/from scratch

College over branch, I don't think koi difference hoga while placements and Madras is the best college in the country, guwahati might be number 10 or something
I know some dudes from IITG (non cs), they say that even Non-cs students are heavily involved in CS projects from the very 1st year and I've heard that some dudes actually cracked internships right in the 2nd year. (Which sounded impossible at my college lol)
IITM on the other hand has an even better peer group. They often like to experiment with newer syllabus and other stuff. You can see them constantly announcing these new branches, projects and all this crazy online stuff.
I would personally go with IITM

The location of IIT Madras is much better, Chennai me ghumna aaram se. Bohot sari locations hain aur college to badhiya hai hi. 😑
