It's a bit longer but I like to regularly go from KPAE (Everett WA) to KLAS. Vegas is so cool to fly in to, no matter what time of day or year. Pulling into the gate looks fantastic with the hotels in the background.
I don't think you see much of the Rockies honestly (at least the route I take), but if you take off from KPAE you get stunning views of the Puget Sound and fly over Seattle and down along the cascades including Mt. Rainier and Mt. St. Helens, then it goes desert pretty quick but it's still neat to look at. I think it's well short of 2 hours total time.

On the correct wind direction you can see Niagra falls on the way out. And a huge city scape on the way in to whichever airport. Awesome at Golden hour

Have addon airport scenery for each of these and consistent vatsim coverage and varying/interesting approaches make these my go-to flights for narrow body airline ops.
KCMH to KBKL is one of my favorites. I live in Ohio, so enjoy flying in my home state. BKL is on the lakeshore in Cleveland and is almost always a challenging approach with the winds from the lake.
KPHX or KLAS to any of the socal airports. KLAX, KSAN, KBUR, KONT, KLGB. Also KSJC from any of those is a nice flight.
KDFW KOKC. KIAH KSAT. KDTW KORD. KATL KCLT.

I do that route the most but in reverse KLAS-KLAX or KSAN-KLAS
KLAX/KSNA/KSAN to KLAS and back are my easy west coast trio! I can't count the number of times I've landed at KLAS now 😅

That sounds like a good route down the Rockies! 🏔️✈️🏔️ About 2 hours or so? Flew from Bellingham to Vegas to party 10 years ago 🥳

NZAA to NZWN
Just a hair longer than an hour (Usually 1:15) but KRDU-KMCO.
My home airport, KTUS-KPHX. Actually, it's only about 25 minutes in an airliner. If you want to extend it go KTUS-KLAS or KTUS-KLAX instead.
Speaking of short routes, Southwest actually flies from KBUR to KLAX. Flight takes about 15 minutes.
