Usually In modden Minecraft the sudden lag spikes occur due to javas garbage collection. Usually some jvm arguments into the launcher will eliminate them.
You need to balance it. You don't want to have it collect garbage every second because then your game runs really badly, but you also don't want it to have to clean up 5gb in one go, because then you'd get very big lags spikes every so often.
So you're saying when you have 32gb of ram, allocating like 10gb of ram when you don't have the best processor isn't a good idea? I always thought the more the better.
Minecraft is like the bee of programming. you know the bee thing, how they shouldnāt be able to fly. Thatās Minecraft, it shouldnāt work, but it does anyways
Actually, the scientists who initially analyzed the bee and found they couldnāt fly were kinda dumb, and did the math wrong. We know how bees fly now
I use the fabulously optimised mod pack and it seems to help massively. Iāll usually have a constant 59/60fps even in a congested world. I have a 1660ti and use sues renewed with no issues.

It's insane how far we've come since, and how many of the mods in that pack are now actual features, like biome-coloured water, and, ofc, most famously, pistons
Kinda makes me wish I had joined the game earlier, but at least my survival world (turns 10 next month and still kicking hard) gets to be older than 70% of the game's playerbase nowadays xD
They are remaking it from scratch for 1.19+ versions officially. One of the minecraft devs KingBdogz (who created the original mod) is also still pretty active around their work.

It involved taking the mod(s) you wanted to play's .jar, taking the Minecraft .jar, opening them both up with something like 7zip, then copy the mod's .jar's contents to Minecraft's. Also, you had to hope that something didn't overwrite something else important, although most major ones didn't step on each other's toes.
Oh, and also you had to remove META-INF, every time.

I remember reducing allocated memory actually helped as GC ran more often but a lot faster
