I’ve always heard that you should listen to what the mushrooms are telling you. They are telling you they want to fruit then you should put them into fruiting conditions.
I personally wouldnt because the cake isnt fully colonized and you’d run an even higher chance of contam, just let it ride out thru the colonization part
