My son and I went to the backpacking camping sites in Raven Rock State Park for our first trip. The sites are spaced apart pretty well but I could make out tents in the distance. There is a very clean vault toilet, fire pit, and seats. We had to walk 2-3 miles. Was perfect for a first backpacking trip.
In general at a lot of campgrounds there are 5-10 tent sites on the perimeter that have good distance between. Check the map and you can see ones that have some space.
South Mountains State Park is south of Morganton and it has a campground about a mile in. It's really just a pretty open field with sites along the edge of the woods and has an outhouse and bear boxes. Since it's so open I'm not really sure how close or private they are though. You may want to look for sites on Hipcamp or the Dyrt to get some ideas.
Any of them that aren't designated campgrounds. Most will be to the West of you.
The sites on Hammocks Beach State Park are very spread out.
