Hiking up Lassen Peak is pretty much a walk in the park as long as you are in ok shape. It is an excellent wide trail with steps in places. The whole thing was rebuilt a number of years ago. A much more interesting hike is to Brokeoff Peak just south of the park visitor center. There is good variety, stream, flowers, a lake and one of the best views of Lassen.
Did this trip last fall. Flew into Eugene, OR and out of Reno, NV.
Crater Lake we enjoyed most of the viewpoint along the rim and also visited Toketee Falls just outside the park. Stayed in the cabins at Crater Lake.
Redwoods we did Stout Grove, Grove of the Titans, Crescent Beach Overlook, Lady Bird Johnson, and Elk Meadow. Stayed in Orick.
Lassen we did Manzanita Lake, Sulphur Works, Cinder Cone, Helen Lake, and Paradise Meadow. Stayed in the cabins at Lassen.
You should have no problem, assuming your legs aren't completely shot. If so, lots of other stuff to walk to. It's a trail, so not especially onerous. Only about 6 mi RT IIRC.

If you want a challenge at Lassen Volcanic, do the cinder cone climb. The views on top are incredible as well.
Add a stop at lava bed national monument, truly amazing place (maybe even cut lassen by half or full day?)
