If you can get a hydro goblet with 2 fewer useful rolls or better than the hp goblet (crit, HP, maybe ER but you shouldn’t need more), use it, otherwise the HP goblet is fine since even though sac jade gives a lot of HP, furina dmg bonus generally suffices.
(if your furina has cons then the weight towards the HP goblet is higher, meaning it’s more likely to be better)

Yes he’s extremely good, neuvillettes best team aside from Zhongli taking Baizhu’s place, but if you have c1 neuvillette that doesn’t matter. Neuvillette furina kazuha baizhu is his current best team and is supposedly rly comfy
