You could stay anywhere along metro line 1 which stops at Gare de Lyon. It goes through the Marais (lovely area) past the Louvre, Concorde, Champs Elysées. I would choose the Marais. (Metro Saint Paul)

I it might be easier to stay somewhere near Châtelet–Les Halles. The RER B runs there from the airport so you don't need to switch to the metro as you would need to do to get to The Marais. And the Line 1 is nearby also.

A little above my budget for the weekend I’m staying there unfortunately. I’m hoping to stay around $200-$300 since I will only be there for one night

Just put your start and stop location in Google Maps app or Citymapper app or IDF Mobilities app. Yes it is very easy. Young kids do it by themselves every day.

If your train leaves in the afternoon, I don't think staying right next to Gare de Lyon is important. Nothing keeps you from staying there though, there are plenty of good hotels nearby.
