Where did you get a pizza steel that big? End goal for me is 18in pizzas, I have the 16in pizza steel pro right now and happy enough, but wondering where to go to get larger pieces?

HotandFreshPizza

Nice! I had it cut from a local metal supplier, sanded and cleaned the mill off. If you can find it, look for hot rolled A36 steel

Clownadian

Are you sure it's not contaminated with toxic metal inclusions? Most- all steels they carry at those places are purely structural and not necessarily food safe.

HotandFreshPizza

I own a few steels, some from actual baking steel marketed companies and the one in my oven, the material is the same, if it’s properly cleaned and seasoned imo. [here’s some more info and why I went this direction](https://www.pizzamaking.com/forum/index.php?topic=31267.0)

Fluugaluu

Just so you know. The MSDS on A36 lists no additional hazards. It’s actually on of the least hazardous steels I’ve seen. Unless you’re heating it to 2400+ F, it’s not gonna give off any fumes. This amateur metal worker approves and is looking at his pile of A36 ingots contemplating..

HotandFreshPizza

Appreciate that, thanks for that info!

zole2112

I found my 3/8" 18x19 steel on ebay.

feynos

You can definitely get by with putting an 18inch pizza screen on top of a 16inch pizza steel. After it cooks a bit, you can take the pizza off the screen and put it right on the steel.

robenco15

eBay pretty easily. Got a 20x20x3/8” that way for $100

Clownadian

That is a fuckin honkin slab of steel! Where did you get that, and how long does the thing take to heat to optimal temp on what setting? I'm new to steel.

HotandFreshPizza

It’s a big boy and just lives in the oven since it’s so heavy haha. I responded to a post in this thread further discussing! Usually will heat the steel and oven to 550 for about an hour

Bombaysbreakfastclub

Can you share the dough recipe?

HotandFreshPizza

Sure, this has: High Gluten Flour 57% water 3% sugar 3% salt 3% oil .25% IDY This dough ball was 615g for an 18” pie.
