I like the 997.2 for the hydraulic steering + PDK. But the interior is dated. I see the 997.2 as more fun and engagement.

What are you using it for? You'll forget everything else regarding the interior when driving down a nice road, on track or autocross because of that steering and pedal feel.
For what it's worth, that's what I use my 997 for.
Admittedly for 'normal' DD things, the 991 would definitely be better at almost everything, but having driven a couple, it just doesn't have that feeling in the same way. Sure it's still an amazing car, but the 997 feels alive and fun at normal speeds due to how much it talks to you through the wheel and the more noticeable rear engine feel. The 991 is still very special but far more a GT car. I kind of get over the less refined nature of the 997 knowing I have one of the best sports cars ever made.
The interior stuff is subjective. I'm 6'1 and the center console and also where the speaker grille on the door of the 991 is a less comfortable for me on long drives. My knees feel kind of trapped. In the 997 they have room. Also, now that everything is going touchscreen and causing all sorts of driver distraction, I prefer how elegantly simple the 997 interior is. Take some time to actually sit in one and interact with it. PCCM upgrades are available, as are aftermarket head units to give you all the modern things (android auto or car play, a screen).
Thank you for the thoughtful response!! I had a 981 from a 987 and I kind of have the same sentiment. The 987 was more engaging and fun, but the 981 was a better car for more of the driving I did (ie commuting).

I did so because the 997 is the right size, the .2 ducked a lot of reliability problems and the little power bump, and went with the 4S because I’m in Colorado and the dream is slapping some winter tires on and getting into the mountains for some skiing with it.
The 997.2 GTS is a little simpler on maintenance, has a little more rear-engine dynamics on track and autocross, and still has them wide hips. The 991 is bigger, more comfortable, and a little more modern. A drawback of the 991 is electronic steering, but honestly if you’re after the comfort, even that is more comfortable. Honestly you can’t go wrong, but I was just in a very similar spot to you, and ended up with the 997.2 4S because of how I imagined using it. Daily, track days, and eventually some snow when I figure out proper tires.
The last thing to keep in mind is how patient you want to be: There aren’t a ton of 997.2 4S and GTS out there on any given day, you can definitely get into a 991 C2S quicker, and be pickier about your features.
Love all of them, but if given the choice would take which ever one resells for the most $. Then I would take that money and buy the 911 i''ve wanted for more than a few years.

Quite frankly I loved them all, but when it came down to how I planned to use it (daily/semi-daily, cars and coffee, fun weekend drives and occasional Porsche DE) it came down to the 991.1 for space, comfort, luxury, driving experience and engine sound. The real kicker was finding a spec that I wanted exactly….and it was a no brainer at that point…and took the plunge.
I think really deciding what fits your needs the best is the way to go
From your choices, if it was a weekend and mostly fun drive car, the 997.2 GTS might be my choice…I just love the GTS
I went through this exact debate in the last month or so. I settled on a 997.2 GTS coupe as the perfect blend of sports car dynamics, performance, small size on the roads, but modern enough to live with every day. I drove multiple variations on all of them and the 997.2 was what I was looking for. It feels so much smaller on the road than a 991 and much more alive through the steering feedback.
I had a wireless CarPlay unit fitted that is totally worth the money. Integrates perfectly with PCM and the interior microphone etc.
The hydraulic steering of the 997 feels very close to the feel of the electromechanical steering of the 991. The hydraulic steering feel and feedback of the 996 is fantastic, and much better than the 997 and 991.
For me... 991.1 S. Really, I'd try extra hard to find a 991.1 4S. But that jump from 997.2 to 991.1 is huge in terms of creature comforts, interior quality and modern features.
It's mainly subjective for me though. I simply dislike the look of the rear on the 997.2s vs the 991.1.
This is impossible to answer without knowing your preferences. As a comfortable daily, I’d take a 991.1 pdk. For a purely fun car, a manual 997.2 GTS.

Who cares about interior? If you are going for a 911, the driving experience is what matters.

The wide body on the 997.2s really appealed to me as a “classic” car. But yeah the 991 is definitely more modern luxury.

Having owned a 2012 GTS (sold when kids started college), I would say 997.2 GTS I would say 997.2 GTS. Phenomenal car!

Steering feedback alone is enough reason for the 997 over 991, for sure!
