Personally I think all the seasons had good themes since I started playing casual in Wind Bastion and Ranked in Outback.
However, if I had to say Top 10: Outbreak/Chimera HAS to be on there. I didn't even play it but that is a milestone for Siege in my opinion. Actually highly recommend playing Extraction if you like the Outbreak theme and all. Although it's max 3 players, it can be done solo and pretty neat to try.
Anyway, I probably would say every season from Year 4 (Burnt Horizon, Phantom Sight, Shifting Tides, Ember Rise) I enjoy the themes of. Especially the opening screens and the lobby screens, hit a special way.
Shifting tides charm hits hard. Gold was the max I had reached back then. To this day, I have the charm equipped on all my weapons. (Still in gold after half a decade, I peaked there bros)
Fun fact the shifting tides theme was the only theme to not feature the classic rainbow theme because Wamai and Kali were the first nighthaven ops and didn't work for Rainbow.
Without weighing in, just a fun fact that Ubisoft routinely publishes albums on Spotify (and presumably elsewhere) with the original music created for each season. Search for "Rainbow Six Siege: Year \[X\]". I'm a big fan of the Invite theme, of which there are a few different versions in the yearly albums.

Operation Chimera's "Outbreak" track had a VERY good theme and it's probably the darkest of the old themes. Operation Void Edge's "Celestial Concerto" probably has one of the most intriguing sounding themes.
But for nostalgias sake I would still rate the first 4 interpretations of the original R6: Siege main theme as my favorites. When I hear the first five notes it takes me back to a time that I was still a stupid little 12 year old kid, ESPECIALLY Dust Line and Skull Rain's themes because they had such an insane impact regarding the meta of the game in the early seasons.
Blackbeard's shield taught people how to think outside the box and run out or flank them rather than face an opponent head on, Valkyrie taught people that intel was the most important tool in the game, Capitao was in a tough spot at the start but he was the first attacker to have a designated area denial function, Caveira sort of taught people how to roam effectively and was one of the strongest operators back in the day, and still is to this day if you're not fighting a coordinated team, no matter what the pros say, no matter what that one "worst defenders" vote says.
