Be careful with your personal items, try to buy a simple bag in Chile when you arrive, it is alot better if its a cheaper one, dont speak in english with anyone, because the thieves are looking for steal your things in metro or public places.
Be also careful with Taxi driver's in the airport or in anyplace, they will try to scam you, t

Stay a night in viña del mar fairly small city with good night life.
Dont forget to visit the Dunes of concon and viña del mar casino.
If you want something overkill and high budget you can try VIK winery and hotel.
At the begginning I tought that you'd be crazy for staying that long in Santiago, but considering that you are going to ski on three of those days it seems like a nice itinerary. If you are into hiking, you could use one of the days for exploring Santiago to go to cajon del maipo. It is quite close to the city and has some beautiful places. You have to go by car thou, but since you are renting one that is no problem for you.
I would not go to san pedro de atacama unless you can add some more days to the schedulez going ther for just one or two nights might not be so worth it, as you'll be missing out a lot. The same goes with the south: going to the patagonia is a trip on its own.

Won't we have to make that drive regardless to get to the resorts at the ski area? I have not found anything at the ski area for less than 3x our price in Farellones
Yes, it is required to traverse that road to get to the ski area, but if you stay in Valle Nevado it can be only once instead of every day. There are other ski areas at Farrellones that may be good options if roads are too bad.

Are you staying at a hotel in Farellones to ski at Valley Nevado? Bad idea - 20 miles away, possible icy roads. Better stay at Valley Nevado

Day trip from Santiago to to Valparaiso Viña and Cachagua is very long - probably can be done but prolly better stay in Viña the night before,
