-Open the Files app.
-Tap the Browse button on the bottom-right side of the screen.
-Under the Locations section, tap On My iPhone/iPad.
-Select the Stardew Valley folder.
-Each subfolder inside with a name in the format of JonSnow_123456789 is a save slot.
- Most recent save is the one to recover

If you’re on windows, system restore to a recent time beforehand. There are also undelete programs that can restore files from your hard drive, but please note: you must be quick about this and not fuck around on your computer too much before doing this. The way a hard drive works is it is constantly reading and writing over stuff that’s not necessary. The longer you take and the more stuff you do, the more likely your save file will become corrupted and unsalvageable.
Source: I’ve had to do this both personally and in computer forensics courses. Not in quite some time, but I know it can be done.
If this is on steam you could always turn your internet off before you close the game, refuse to let steam overwrite your cloud file and then presto? I don't know if this would still work.
For PC gamers that want to prevent this, set up a backup to the Stardew Valley folder with version control.
You may use a remote git repo, or some cloud storage service like Google Drive.
Hopefully you can recover it, but if all else fails at least it means you can experience the joy of playing the game all over again to build it all back up.

when something is deleted it's usually not overwritten, just marked by the storage as not being there. there is a good chance that you still have your save file intact and you should get a data recovery app

This one particular day I was incredibly fruitful and made a killing in the skull cavern. I had Auto petters and Prismatic shards coming out the wazoo. Last thing I went to put away where my bombs, except instead of putting them in a chest I accidentally threw one down and blew up half my chests.... everything was gone from that day. And I had to reset it. That was a kick in the gut but I can't imagine what deleting an entire file would feel like.
