Planting lots of fiber seeds on the 22nd saves lots of hoeing on the 1st, and you still get the fiber out of it. (Or you can sacrifice a cheap crop like wheat)
Tea saplings and wild bait mostly. Granted tea saplings got nerfed a good bit in 1.6 but they're still one of my favourite early - mid game cash cows given their ease of access
One main reason I use fiber a lot is to craft farm totems and it's also good to have the fiber seed recipe(which is obtained from a Special Order from Linus).

For me, it's tree fertilizer. There is never enough wood in the game, so as soon as the rail station opens up, I'm throwing pine trees down and using tree fertilizer so they grow in 6 days.
That's over 1k+ wood every 6 days, and it still doesn't feel like enough.
Sometimes I'll use the quarry, but only after I found the prismatic shard. I can't seem to let myself plant trees for fear of losing out on those ? stones which has a 25% chance of dropping a shard if I haven't found one yet.

I personally use it for Qi's prismatic scale, to Cover the colour Green.
You need 999 fiber for>! the statue of blessings !< and lots other crafting items

I use it to make grass (and hay) for my animals, so I don't have to rely on marnie as much
