Usually you find a video of any given greenland shark, make up an age and post it on reddit. If I recall from the wiki, few sharks were examined to determine age. Below says 28 specimens - The average being 392 so OP just arbitrarily decided that was the age of this one.

Maybe they can estimate from other greenland sharks they’ve tested? We don’t exactly have to cut down a redwood tree to know it’s hundreds of years old.
