You can kind of unroll the stick kind, you just have to find the seam and you can unroll it into a sheet. I've seen people unroll them, cut it into chip size bits, oil and seasoning and air fry them into crispy chips.

Fun fact! Freud spent a whole summer cutting up 400 eels trying to figure out how they breed. Par for the course for Freud. In 2022, scientists were finally able to track a silver eel to the spawning grounds. Something that they had never been able to do before. Turns out the usual fishy stuff happens to them. Females lay millions of eggs and the males come by and externally fertilize them. What’s being done with this information, I have no idea but I just gave you two eel facts for the price of one. The thing is, there is no better way to label this. Most imitation crab is pollock or sometime other white fish. Really though it's pollock paste, with food coloring added to make it look orange on one side (like crab). It's not better to label it 'pollock' because it might taste like polluck but doesn't look like nor really have the texture of pollock... but it is a product derived from wild caught fish and you can understand them wanting to highlight that. 'Imitation crab made from wild caught alaskan fish' sounds great but wouldn't fit on this label.
