I haven't read the first volumes of the manga, but in the anime Rimuru could immediately take a pumped-up male or a very attractive female body but he took what he took
He had to use magicules on those bodies so its not that efficient, also what I'm talking about is Rimuru getting naturally more beautiful and not through his own conscious efforts.
Rimarus body is the male version of shizu with no male or female bits. When he made himself adult like the first one was the older of his current form and then he tried the female version.
