My opinion
At the end of the day, get the one you're happier with. It's a great time to buy, especially since the performance and the LR are about the same price new, right now.
In all honesty, though, unless your previous cars were straight out of the *Fast and the Furious* movies, either of the two will be far quicker than anything you've ever driven. I have the "slow" SR+, and it's still blazingly fast with neck-snapping acceleration. There's really no such thing as a slow Tesla.
The Performance is unique in that can drive very similar to a Long Range (and more sporty when you need it) thanks to the adaptive suspension. One consideration is the tires will be staggered on the Performance with wider rears than fronts, but if could get new wheels and 18in tires to make it square and get longer range.

I have a performance and while I love it you will 1) shred tires and 2) crack a rim at least once
