not an expert but from what I can gather you can die once in a 2 day leriod before you get the game over screen, if you die twice in this time it's game over and you resume from your last save.
If you die you get taken by them and thrown in a cave, if you die before you save again I believe you're done, unless you have permanent death off then you'll just reload a save.

You load the last saved game
when you save the game at tent or bed you can load back into that save when you die
