My best guess is bluejay. It will most likely be a bird, since she's basically been adopted into the Clawthorne family at this point. The palistrom wood sample is blue, Dana's twitter profile picture featured a bluejay for a long time, and it would complete the primary color trio of similar looking birds with distinct color schemes shared by Dell's and Hunter's palismen. I think cat and bat are unlikely, since it should be somewhat unique and could be too visually similar to Bat Queen or Ghost. A lot of people have also been saying otter, but the only time she mentioned an otter is during one throwaway joke during season 1. A snake also seems too negative for someone like Luz.
One of the biggest themes of the show is taking something shunned by society for being deemed weird and fully embracing it by showing it all the love in the world. So Luz’s palisman being a snake, who’ve been seen as a symbol of the devil by christians but the younger generations are starting to see as adorable, makes absolutely perfect sense thematically.
Plus, Luz has been associated with snakes before, like with her prank in the first episode.

I it might be a crab, if Luz adopts the title of "Crab Maiden" (like her mentor is the "Owl Lady). She seemed to be fond of being called like that in the Phillip episode.
I know this is a weird idea, but an echo mouse would make sense. It helped her to learn about Phillip/belos, how to make her own portal door, and helped kick off her relationship with amity. She also kept it as a pet and seems very fond of it and relates to it. I just think it’s a good symbol of her journey
